I knew the cooler weather was quickly approaching, so I decided to dive head first into all things fall. I also knew the days would be fast paced and leave little wiggle room once the school year started. I’ve been on a bar kick and wanted to create a fall bar that didn’t take long to make and was good for me. It’s basically a fall party in your mouth. I’m slightly obsessed with them and you will be too after the first bite. 🙂

Ingredients:
1/2 cup unsalted pecans
1 cup unsalted almonds
1 cup chopped and pitted dates
3 Tbsp pumpkin puree
1/4 tsp pumpkin pie spice
1/4 tsp cinnamon
1/4 teaspoon nutmeg
What to do:
Pour the pecans and almonds into the food processor and pulse on a few times until they are semi-chopped. Add all the remaining ingredients into the food processor. Pulse on high and then on low or until it starts forming together into a sticky mixture. Line an 8 x 8 pan (or really any pan) with wax paper. I used a spatula to flatten the mixture into an even consistency in the pan. Smooth out the top and edges. Place in the refrigerator for 2 hours. Cut to desired width. Store in an air tight container in the refrigerator or counter.
I thought I haven’t shared how I meal plan on here before because honestly, it seemed way too basic and not really blog-worthy. But then I realized because it’s so basic, it makes it something I need to share. I also realized after I wrote half of this post that I gave you a quick overview here! But today I want to go a little deeper because I know a lot of people have a difficult time meal planning each and every week. I thought a refresh would be helpful for those of you in the throws of school, sports, work, whatever-season-you-may-be-in! (I hope?!) I plan on going into more detail in the future based on what you find the most useful. Comment, message me, or e-mail me with what helped you the most! Here we go…Each week, I think about what’s in season, what we are getting from our CSA, and I take a look at our calendar. On nights when Eric had softball games, I have plans, or something else is scheduled, I want a quick meal on those nights. My newest, “thing” is taking a look at the weather. Something i’ve definitely cringed at is having a comfy, hot soup on an unexpected 85 degree day. Or if I’m making my Autumn Roast on a 95 degree day, it’s definitely not as enjoyable as on a rainy 60 degree day.
I’ll make a list of about eight recipes I plan on making for the week. Then, I’ll glance at the list and see if any ingredients overlap, that way I won’t waste ingredients throughout the week. I also don’t like to make similar things back-to-back. (A quiche, frittatas, then eggs and bacon for dinner, etc.) We have our dinner leftovers for lunch the next day majority of the time. If dinner is something that we don’t have enough left over or takes forever to pack up for lunch, I like to make a big bowl of something to have on hand for lunches throughout the week. (Winter Couscous Salad) If we ever run low on leftovers for lunch, it’s nice to have something from breakfast (like a quiche) that we can use for a lunch as well! 🙂
Here’s an example of meal prep from a few weeks ago. It’s a great mix of veggies, fruit, protein, and healthy fats all throughout the week and each day!
Tuesday- Cobb Salad (When I buy eggs, I can use them for the quiche and this salad. I use bacon here and for Saturday as well).
Wednesday- Veggie Detox Bowl (I’ll use kale here and for my Winter Couscous Salad. If I buy carrots in bulk, sometimes I’ll roast them and add them to the detox bowl, then I’ll use them in the roast below).
Saturday- Bacon Chocolate Chip Pancakes for breakfast (you can use chocolate chips here and for the snacks below), a salad for lunch, and eggs and bacon for dinner. I love breakfast for dinner!

It may take a little longer the first few times you plan but eventually you will be able to do this in no time! It doesn’t have to be fancy but it DOES have to be practical and work for you. Happy Friday everyone! This week kicked my butt..and all I can think about is sleeping in a little bit on Saturday. As everyone gears up for back-to-school everything, I can’t help but jump on the bandwagon and get ready for fall things. (Even though I plan on going to the pool this weekend). 🙂 If you’re not ready quite yet but need some recipes in your back pocket for the weeks to come, pin these and save them for later!
One.First up, my Pumpkin Pecan Bars. They are a FAVORITE. It is the quintessential fall treat and you should make them now.
This is completely unrelated to all things fall but I promised some of you that I would let you know what I thought about this hair serum. I’ve used it for two weeks and found out what I liked and didn’t like about it. The serum comes out via a dropper. When I used it for the first time, I filled up the entire dropper, put the amount in my hand and all over my hair. Big mistake. I was convinced I didn’t like it at all but it was because I put way too much in my hair. It felt greasy and obviously wasn’t the look I was going for. The next few days I only added about two drops to my palm before applying it to my hair and have loved it ever since I learned my lesson. Do I put it on every day? No. I haven’t been washing my hair every day, so I only add it when I have a clean wash and my hair is damp. Would I recommend it? Yes. I love that it has clean ingredients, adds shine, and gets rid the dry feeling.

What I’m loving:Alright, so I completely dove headfirst into podcasts. Eric listens to them on his commute and talks about them a lot. But my old car didn’t have bluetooth. (I know?) But I now spend my 45 minute commute listening my heart out to a ton of different podcasts and not wanting the drive to end. I’m obsessed.
I’ve been listening to anything from Shauna Niequist’s podcast to essential oil podcasts, to Jenna Kutcher. I’m loving them all. What other podcasts am I missing?!
I like fall. I really do. But I am a baby when it comes to cold weather. As in, anything less than 70 degrees makes me a little grumpy. So there’s that.

Braiding my hair more. Random, I know. 😉
What I’m excited about:Although I’m not a fan of the cold, I’m also really excited about pumpkin everything. It’s warm and cozy and who doesn’t love that?!
What I’m watching/reading:The last few weeks before school started, I loved watching Ellen in the afternoon. You can always count on her for a good laugh.
This book talks about how how language is the most powerful teaching tool in the classroom. I think it also can apply to every area of life and how our language can cultivate community wherever we are. You can buy it here.

Silence (which I’m soaking up when it comes 😉 ) and podcasts.
What I’m wearing:I’ve talked about this dress before and I’m going to talk about it again. I bought it in navy in June and wore it in Italy, around the house, out to dinner, and so on. Yesterday it was super dreary all day and I wanted something extra comfortable to wear to school. I threw this dress on, paired with this and earrings similar to these. Done!
What I’m doing this weekend:
Sleeping in. Catching my breath. Celebrating my Mom’s birthday.
AND…my best friend from Germany text me saying her and her husband will be coming home! So excited!
What I’m looking forward to next month:Our hometown fair!
