Best Recipes

We got back from Italy late Saturday night after 11 days of unplugging and exploring, and I think it was just what we needed! It was an incredible trip and I can’t wait to recap it for all of you! (Once I’m caught up on laundry and not quite as jet-lagged). ;)You can see a sneak peak of pictures, here!  Needless to say, because of that, it’s been a little quiet around here and a part of me definitely missed all of you!

whatsupwed1WUWquestions editIt’s already the end of June, which makes me incredibly sad but also makes me want to savor everything that comes with this season of life. So, here we go. 🙂 

What we’re eating this week:My Sweet Potato Fries with Dipping Sauce since our CSA has been giving us a lot of sweet potatoes and my Guacamole have been made a lot around here lately!

What I’m reminiscing about:One of my closest friends is in Greece right now and I am living vicariously through her as I reminisce about my trip there!

What I’m loving:

The sunshine, the pool, the slower days, the relaxed pace…I’m loving a lot lately.

What we’ve been up to:We’re on the house hunt. So, there’s that. A girl can dream, right? (Or maybe I can convince Eric that we should build?) 😉 

What I’m dreading:

It’s too early to say back-to-school, isn’t it?

What I’m working on:Waiting patiently. Because sometimes it’s just flat-out hard. 

What I’m excited about:

Italia! 

What I’m watching/reading:Other than the Today Show, (which you know I get so excited about) I just finished watching all three seasons of Cedar Cove. I didn’t even realized I watched the finale and then was so sad it was over. Any suggestions for other shows? You can never go wrong with a Nicholas Sparks book like Message in a Bottle right?Remember I mentioned in February how this book was recommended at a conference? It is an amazing, inspirational, and motivating book that will definitely get you thinking about marriage in a different light. You can buy it here!

 

What I’m listening to:

I can’t stop listening to this song!

What I’m wearing:Last month, I mentioned how I like simple sandals. I ended up getting these and have loved them with so many outfits!

What I’m doing this weekend:

Relaxing!

What I’m looking forward to next month:My sister and I have a spa day planned for her 30th birthdaaaay!

What else is new:

Other than all the above, not a ton! 😉

Bonus Question: What’s your favorite 4th of July tradition?

We don’t really have a particular tradition or favorite…but it has to involve fireworks. Seeing them, lighting them, and so on. Fireworks are a must!

But let me tell you, the heat has been turned up around here. The temperatures here have been in the mid 90’s and for PA, that’s not completely the norm. When I step outside in the morning and it’s already warm, sometimes a hot drink isn’t my first craving. I took a spin on the average matcha latte I’ve been making and tried my hand at making it into a homemade frappuccino. Turns out, I loooove it just as much! 🙂 So will you, promise. xo

Ingredients:

  • 10 ice cubes
  • 2 tsp Jade Leaf Matcha Tea
  • 1.5 cups whole milk
  • 1/4 tsp xanthan gum
  • Heavy whipping cream
  • organic maple syrup to taste


What to do:

Blend all ingredients (except heavy whipping cream and maple syrup) in a quality blender until smooth.

Homemade Whipped Cream:

In a mixer, whip heavy whipping cream and pour in maple syrup to taste. Whip on the highest setting for a few minutes.

Pour the frappuccino into a glass and top with desired amount of whipped cream! So refreshing, right?!

Salmon Salad + Spicy Cilantro Avocado Dressing

A lover of salmon is really old news to most of you (exhibit A, B, and C) but having the dressing be the star of the show is new for me. Aaaand I kind of love it! This packs a punch with a balance of greens, salmon, the red onion for crunch, and the spice and creaminess of the dressing, thanks to Stonyfield’s Smooth and Creamy Yogurt! This summer salad won’t disappoint and you’re welcome in advance. 😉
Salmon Salad + Spicy Cilantro and Avocado Dressing--Recipe at: stephanie-spring.com


Ingredients:

  • 10-14 ounces salmon
  • mixed greens
  • 3/4 cup red onion
  • Dressing: 
  • 1/2 an avocado
  • 1/2 cup Stonyfield Plain Whole Milk Smooth and Creamy Yogurt
  • 1/4 cup water
  • 1 cup cilantro (stems and all)
  • 2 dates
  • 2 tsp crushed garlic
  • 1 tsp chipotle
  • 2 tsp lime juice
  • 1/2 tsp salt


 What to do: 

Preheat oven to 350 degrees. Line a deep dish pan with foil. Place salmon in foil and drizzle with EVOO. Fold foil. Bake for 20-30.

While the salmon bakes, in a medium-sized bowl, place mixed greens and red onion.

For the dressing: Place all ingredients in blender and blend until smooth. Pour into a mason jar or container with a lid in case there is extra to store in the refrigerator.

When the salmon is fulled baked, peel the skin off. You can place it on top of the salad or shred it. It is great served hot or cool. Drizzle the dressing on top and enjoy!
