What I’m reminiscing about:Eric and I have been reminiscing a lot lately about when we first started dating. (A blurry but favorite picture). 🙂 We talk about how much we loved our trip to Italy almost weekly and reminisce about it. (Capri, Tuscany, Florence). I also bring up sunshine and summertime pretty often. It feels like we have been reminiscing a lot lately and it is so fun to look back and see where we are now.

What we’ve been up to:

Life has been BUSY! Report cards are due. We’re setting up the nursery. I have conferences at school next week. We’ve both randomly have had a lot of work commitments all at once. Baby appointments are more frequent. It has been busy and wonderful all in one and I know that a slower, season right before the baby comes, is right around the corner. So thankful.

What I’m dreading:

 Having to buy more maternity clothes. Ugh.

What I’m working on:

Working on a list of freezer meals (any tips?!) and report cards. And no, they don’t go hand in hand. 😉My Game Day Chili is already on the list of freezer meals!

What I’m excited about:Eric and I have a few things planned over the next month or so. One of those things is a couples massage. Eric was really skeptical the first time we went and he ended up LOVING it. It is such a nice way to unwind. Excited is an understatement!

What I’m watching/reading:

We have really tried to take a break from watching T.V. lately. Between Hallmark Christmas movies (which I love and always have playing during that season) and just the winter blues, I feel like it has been on a lot. We have tried to be a lot more intentionally about keeping it off and honestly, it’s been so nice. We did watch the movie, Wonder the other week and loved it!

Our friends gave us the book, Baby Wise to read. They loved it and I can see why. Eric and I are both reading it. We’re only about halfway through but it has been SO insightful!

What I’m listening to:

Podcasts and Lauren Daigle Pandora. 🙂  

What I’m wearing:

Majority of the time lately you can find me in sweatpants. ha! But when it randomly reached almost 80 degrees last week (PRAISE JESUS!) you better believe I grabbed this dress and wore it! I think it’s more comfortable now than ever before!

What I’m doing this weekend:

We set time aside for a lot of R & R this weekend. 🙂 

What I’m looking forward to next month:

Warmer weather? Fingers crossed!

What else is new:Baby Spring is still growing and moving around like crazy! But what is new is…I’m in the third trimester already! I love her so much already. 🙂

Weekly Meal Planning

Every Saturday (or so), I make a meal plan. I go grocery shopping Mondays after work and get everything I need for the entire week. I despise having to make extra trips to the store. So I can avoid making more than one trip a week, I try to be as thorough as I can in my list beforehand.

I love using post-its and notepads to keep a running to-do list, but using Wunderlist for my groceries has been a game changer. Seriously. Instead of worrying if I have the list with me when I go shopping, I know I’ll always have my phone which has the Wunderlist app right there. Also, Eric and I share the list which is so helpful if there is anything he wants to add at the last minute. I do write the overall meal for each night on a post-it note but then add the ingredients to Wunderlist. I have three basic categories when I am writing my list: Breakfast, dinner, and snacks. Most of the time, our lunches consist of what we ate the night before. It saves time, money, and clean up.

Since I have gotten into this routine, it has become easier each week. Whenever I’m at a loss, I look up recipes on my blog that I may have forgotten about, flip through some of my favorite cookbooks, or scroll through Pinterest. I listed some of my go-to’s below for each category. You can also shop my pantry to have a lot of the ingredients I use often on hand!

Friday Favorites

It was SO WARM here this week! It was a breath of fresh air and made me SO ready for spring! Plus, who doesn’t love a four day week thanks to President’s Day?  As always, I’m sharing some favorites from the week!

I talked here about how much I have come to love this little shop (and still do). I purchased this tray, which now holds (most of) our fruit and veggies! I love it the look of it and the fact that it saves space on our counter!

Three.I have followed Dashing Dish for several years now. I love her heart and mission for people. I recently downloaded her devotional, “For a Healthier You,” (because pregnancy seemed like an appropriate time) and have come to love it in such different ways than I expected. Four.

I ordered this on a whim for the nursery, thinking that if we hated it we could just return it. It turned out that we LOVE it for the nursery and debated about getting one for our living room.

Five.On Wednesday I talked about some updates on the nursery (here). Little Peaches

27 weeks of growing this little baby. In some ways it has moved along at the speed of a snail and in other ways, time is flying and I can’t seem to catch my breath. This past weekend we added a few more touches to the nursery (a reveal is on it’s way soon, I promise!) and purged A LOT. (How we can accumulate so many things in such a short time is beyond me?!) To make parts of the room seem more complete we filled some drawers with her itty bitty clothes and bought some more decor for the walls. It has been more fun than I even imagined to decorate this room for someone I haven’t even yet met and already love so much. The idea of becoming a family of three is becoming more real every time I pass by the nursery.

To help it all become even a little more real, we added some bedding to the crib, even though she won’t be sleeping there for a little while. I already mentioned here how much I have come to love this shop. To make me love it even more, I received a fitted sheet for the crib along with a hand written letter. I love snail mail and how genuine Elise (the owner of Little Peaches Shop) is. She also has such fun patterns and designs that go far beyond just fitted sheets.

Three Ways To Toast

Recently, I’ve had a lot of you ask me what I eat for breakfast on a daily basis and these three toasts deserve all the attention. I eat at least two to three of these each week without fail. They are filling and versatile but also paaaaacked with flavor!

The ezekiel bread has clean ingredients (unlike most breads) and is kept in the freezer so you won’t have to consume the entire loaf in only a few days. This is the main bread we keep in the house and Eric and I both love it! Ingredients and what to do:

Peanut Butter Banana Toast:

After toasting the bread, spread desired amount of peanut butter on toast. Place banana slices onto the peanut butter and top with hemp hearts followed by sprinkling with salt. 

 

Avocado Toast:

After toasting the bread, spread desired amount of vegenaise on toast. Scoop half avocado onto the veganaise and gentle press down with a fork until evenly spread. Top with S & P followed by sprinkling with red pepper flakes.

Tomato Toast:

  • 1 piece Ezekiel Bread (toasted)
  • Vegenaise
  • 1 tomato (sliced)
  • S & P
  • A fried egg on top is deeeeelicious (optional)

After toasting the bread, spread desired amount of vegenaise on toast. Place tomato slices onto veganaise and top with S & P. A fried egg can be placed on top for a more protein-packed breakfast.
