 Ingredients:

  • 1 and 1/4 cup shredded zucchini
  • 2 eggs
  • 1/4 cup maple syrup
  • 3 Tbsp coconut oil (melted)
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1/4 cup organic coconut palm sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 and 1/2 tsp cinnamon


What to do:

Preheat oven to 350 degrees F. In a large-sized bowl, combine all dry ingredients. Stir together and set aside. In a medium-sized bowl combine all wet ingredients and whisk. Add to dry ingredients and whisk together. Grease loaf pan (I used butter) and pour batter into it. Bake for 55 to 60 minutes or until you can stick a toothpick in and it comes out clean.


 

Friday Favorites

The happiest of Fridays from me to you because we made it through the week! 🙂

One.My cousin gave me this book around Christmas and I can’t believe I haven’t shared it yet! It walks you through stages of baby food but also includes recipes for the entire family. It’s all based on eating real food, which you know I love learning and reading about! You can buy it (or at least read more about it) here!

Two.

I’ve noticed over the last few years I have worn dark nail polish during the summer months and light colors during the winter??? Either way, I’m loving this nail polish lately!

Three.

One thing I love giving my students every year for Valentines (because Valentines Day in 5th grade is a BIG deal) are heart pencils and candy because you can never go wrong with both. We always have a fun little party also but I thought I’d share some similar pencils that I get as a simple and fun idea. 🙂 24 pencils for under $3.00 is also a steal!

Four.This smoothie is just too good not to share!

Five. I know I just talked about this rug on my last post (here) but I am still talking about it. We have it in the nursery but I would definitely add it to our living room or any room for that matter. Plus, how can you beat the price?!

What we’re eating this week:My Winter Couscous Salad.My Easy Tomato Soup with Sun-Dried Tomatoes. 

What I’m reminiscing about:Eric and I were just reminiscing about our little getaway to a bed and breakfast last year. We went mid-week, ordered sushi, relaxed, and woke up to a winter wonderland, which was the cherry on top of the entire experience. We loved it and have another one planned soon. 🙂

 

What I’m loving:

This basket. 

What we’ve been up to:

We have been binging, purging, and donating A LOT. Think: every closet.

What I’m dreading:

To be honest some nights I dread sleep lately. Obviously I’m needing and wanting it but I also really have a difficult time not sleeping on my back and/or stomach. I bought a body pillow, which has helped some nights but it hasn’t been the easiest. Of course it’s all for a much bigger blessing overall. 🙂

What I’m working on:Creating some chat books from our wedding.

What I’m excited about:

 We bought this rug for the nursery and I LOVE it! I’m so excited to see it all come together and I’ll be sure to post pictures! 

What I’m watching/reading:We have been watching an episode of The Crown almost every night and almost finished both seasons.


I know, I know. You’re probably thinking I’ve been reading these for months and you’re exactly right. Wonder, Of Mess and Moxie, and Mama Natural have still been the books I’ve been picking up over the last month(s) and working my way through. I’m trying to get more reading in these days and using it as down time rather than scrolling through my phone. Any book suggestions..especially new mamas out there?

What I’m listening to:

Podcasts. I listened to the Happy Hour with Jamie Ivey recently where she interviewed Lauren Scruggs Kennedy and can’t stop thinking about it. Her perspective is so encouraging and such a good reminder of what’s important in life.

What I’m wearing:

                       

Nike Sneakers. Hunter Boots. Leggings.

Comfort, warmth, and staying dry from the snow has been the main goal this month.

What I’m doing this weekend:It’s birthday weekend because I’m going from one birthday get together to another! 🙂 (And I’m not complaining about that one bit!)

What I’m looking forward to next month:

Hopefully putting sickness behind us?! I was sick, then Eric was sick and I just hope some more health comes in February!

What else is new:

There are so many changes ahead but for the moment, not too darn much. 🙂

 Bonus question: What’s your favorite soup recipe?Potato, Sausage, and Leek Soup is one of my absolute favorites! Especially for cold days and nights. 🙂

Chocolate Banana Mocha Smoothie

I’m always up for a smoothie year-round. In the heat of the summer, a smoothie is so refreshing. A smoothie during the winter? I’ll take it! (Especially when it’s perfectly packed with so many nutrients that I need). I love how much you can mix and match your ingredients as you create a completely new tasty concoction.

Smoothies are my go-to for breakfast or a snack, especially since pregnancy has given me the craving for everything iced and frozen. I haven’t really had any food aversions throughout pregnancy so far (thank goodness), except one thing….

I can’t sip on my morning cup of joe anymore. Hot coffee that is. I still love the flavor of it but can’t seem to down a hot cup for the life of me. To still get the flavor and little caffeine I need from time to time, I’ve been making iced or frozen coffee drinks to satisfy the craving. I found this recipe from Lakita which combines coffee in a smoothie. It is SO delicious and exactly what I need these days. Thank you Lakita for such a yummy recipe!

Friday Favorites

Well…this week was a doozy. I was sick, then Eric was sick and we just couldn’t seem to catch a break. My Friday Favorites are short and sweet this week because sleep has trumped most plans and productivity. Fingers crossed we’re both getting better and we have the weekend to rest and relax. Praise Jesus! I hope you and your family are staying healthy wherever you are! 🙂

I got a new phone. It’s almost identical to my last one but definitely an upgrade compared to my four year old one. 😉 I also got this! I know I’m completely behind on getting one and I now understand why so many people love them! (Also I love this phone case).
