 Ingredients:

  • 1 and 1/4 cup shredded zucchini
  • 2 eggs
  • 1/4 cup maple syrup
  • 3 Tbsp coconut oil (melted)
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1/4 cup organic coconut palm sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 and 1/2 tsp cinnamon


What to do:

Preheat oven to 350 degrees F. In a large-sized bowl, combine all dry ingredients. Stir together and set aside. In a medium-sized bowl combine all wet ingredients and whisk. Add to dry ingredients and whisk together. Grease loaf pan (I used butter) and pour batter into it. Bake for 55 to 60 minutes or until you can stick a toothpick in and it comes out clean.

What we’re eating this week:My Winter Couscous Salad.My Easy Tomato Soup with Sun-Dried Tomatoes. 

What I’m reminiscing about:Eric and I were just reminiscing about our little getaway to a bed and breakfast last year. We went mid-week, ordered sushi, relaxed, and woke up to a winter wonderland, which was the cherry on top of the entire experience. We loved it and have another one planned soon. 🙂

 

What I’m loving:

This basket. 

What we’ve been up to:

We have been binging, purging, and donating A LOT. Think: every closet.

What I’m dreading:

To be honest some nights I dread sleep lately. Obviously I’m needing and wanting it but I also really have a difficult time not sleeping on my back and/or stomach. I bought a body pillow, which has helped some nights but it hasn’t been the easiest. Of course it’s all for a much bigger blessing overall. 🙂

What I’m working on:Creating some chat books from our wedding.

What I’m excited about:

 We bought this rug for the nursery and I LOVE it! I’m so excited to see it all come together and I’ll be sure to post pictures! 

What I’m watching/reading:We have been watching an episode of The Crown almost every night and almost finished both seasons.


I know, I know. You’re probably thinking I’ve been reading these for months and you’re exactly right. Wonder, Of Mess and Moxie, and Mama Natural have still been the books I’ve been picking up over the last month(s) and working my way through. I’m trying to get more reading in these days and using it as down time rather than scrolling through my phone. Any book suggestions..especially new mamas out there?

What I’m listening to:

Podcasts. I listened to the Happy Hour with Jamie Ivey recently where she interviewed Lauren Scruggs Kennedy and can’t stop thinking about it. Her perspective is so encouraging and such a good reminder of what’s important in life.

What I’m wearing:

                       

Nike Sneakers. Hunter Boots. Leggings.

Comfort, warmth, and staying dry from the snow has been the main goal this month.

What I’m doing this weekend:It’s birthday weekend because I’m going from one birthday get together to another! 🙂 (And I’m not complaining about that one bit!)

What I’m looking forward to next month:

Hopefully putting sickness behind us?! I was sick, then Eric was sick and I just hope some more health comes in February!

What else is new:

There are so many changes ahead but for the moment, not too darn much. 🙂

 Bonus question: What’s your favorite soup recipe?Potato, Sausage, and Leek Soup is one of my absolute favorites! Especially for cold days and nights. 🙂

Friday Favorites

This week I’ve spent A TON of time at home thanks to MLK day and snow days. I’ve had a lot of time to research baby things and some of my favorites this week reflect just that. It mainly stemmed from my parents being so sweet and bringing the crib and dresser to our house this past weekend for the nursery. We planned on starting to set things up a few weeks ago but snow got in the way. I’ve been browsing my heart out ever since then and after setting up the crib and dresser, Eric and I both looked at each other realizing how real everything is becoming! 🙂

One.

I spent almost all of Saturday rearranging, binging and purging a lot of things that somehow in a few short years we’ve accumulated, to make room for baby things. It all happened at the perfect time though because I was listening to Jen Hatmaker’s podcast featuring Emily Ley and I was completely inspired for a simpler life going into this season. (Or at least an attempt)… 😉

Two.

I’ll be doing a (or a few) nursery posts in the next few months but I thought I’d share some similar cribs and dressers as to the one we have. 🙂 It’s a 3-in-1 convertible crib, which I’m really excited about!

You’re either going to laugh or say a big, “Amen” to this favorite. It’s just necessary, ladies. This Cocoa Butter works wonders.

Dr. Bronner’s Pure Castile Liquid Soap – Baby Unscented// Clear 1 Gallon Jar// Pure Baking Soda

I finally ran out of the laundry detergent we have and I’m so excited to try this homemade kind! A friend recommended it to me because she loves it! I already had most of the things on hand. Dr. Bronner’s is amazing for so many things. I use it often to clean my make-up brushes. I’ll let you know how I like it! 🙂

Friday Favorites

Between early dismissals and delays for weather, plus a lot of testing at school, this week has definitely kept me on the edge of my seat! But man oh man, do I love a Friday and I have some favorites to share of course. 🙂

One. Two. Three. Four.On Sunday we had our family over for the gender reveal of Baby Spring. (Favorite #1) 🙂 It was so, so fun! Eric and I already knew what the gender was but wanted to get everyone together at once to tell them.

We had a, “make your own pasta bowl” menu with bow tie pasta, chicken, sausage, pesto sauce, and tomato and basil sauce. (This pasta bowl is a favorite! Favorite #2) A girl from our church made these adorable cake pops that looked and tasted ah-mazing! Seriously, I could go on about them. They were individually wrapped with a bow and had pink cake on the inside. I squealed a little after we picked them up. 🙂 (Favorite #3) We are so excited to meet our little girl! (Favorite #4).  All of you completely blew me away with your comments on Instagram. Thank you for being so sweet and excited for us! 🙂

Five.I have been browsing a lot of baby shops lately (surprise) and have already found a few that I absolutely love! Over black Friday I ordered this teether because I thought it was so cute and I have become a huge fan of Little Peaches Shop. Plus, how cute is that name?!

Six.I snacked all week on my Trail Mix Bark!

Seven.

We had this lamp on our registry when we got married and I just ordered another one, here. I have no idea why on earth it took me SO long but I love, love it! Plus, it’s on sale. 🙂

Friday Favorites

This week…ahh. 🙂 It was filled to the brim with great memories and A LOT of downtime. 🙂 I collected some of my favorites for the week if you want to shop them! 🙂 I’ll be back next week with some recipes for you!

Also, I’ll be sharing the gender of our baby so soon! It was the best Christmas gift to find out if we are having a baby boy or girl! 🙂 Happy New Year everyone!

This Cocokind matcha stick moisturizes my face and is great to put in my purse on the go. I originally put this on my Christmas list because I liked the simple and clean ingredients in it. Everyone also knows I love matcha. 😉 I put it on right after my face moisturizer sets on my face. It gives it that extra touch of moisture I need, especially in the winter months. I also want to try the one below. 🙂

Two.This pitcher from target is so cute!

Three.This scarf from loft is SO soft! I love a good scarf and The Loft!

Four.I think I’ve worn these earrings every day since I’ve gotten them. My Mom got them for me in the medium size and I LOVE them!

Five.

I am super excited to read this book that my sister got me! Thank goodness I still have a few days to do so. 😉
