Weekly Meal Planning

Every Saturday (or so), I make a meal plan. I go grocery shopping Mondays after work and get everything I need for the entire week. I despise having to make extra trips to the store. So I can avoid making more than one trip a week, I try to be as thorough as I can in my list beforehand.
I love using post-its and notepads to keep a running to-do list, but using Wunderlist for my groceries has been a game changer. Seriously. Instead of worrying if I have the list with me when I go shopping, I know I’ll always have my phone which has the Wunderlist app right there. Also, Eric and I share the list which is so helpful if there is anything he wants to add at the last minute.Â
I do write the overall meal for each night on a post-it note but then add the ingredients to Wunderlist. I have three basic categories when I am writing my list: Breakfast, dinner, and snacks. Most of the time, our lunches consist of what we ate the night before. It saves time, money, and clean up.
Since I have gotten into this routine, it has become easier each week. Whenever I’m at a loss, I look up recipes on my blog that I may have forgotten about, flip through some of my favorite cookbooks, or scroll through Pinterest. I listed some of my go-to’s below for each category. You can also shop my pantry to have a lot of the ingredients I use often on hand!

Cheers to these three toasts! Not to be confused with cheers-ing with a bubbly drink in hand because obviously that’s off my radar these days. Are you wondering if these toasts are equally as good though? Just about! 😉

Our weekend was slow and so relaxing to gear up for a busy week ahead. After church, I whipped up a batch of these clean-eating blondies and just might have to make another for Wednesday (a-hem Valentine’s Day) to keep all my other chocolate cravings at bay. They are quick to make and deeeee–licious! You will not be disappointed with this recipe and no one will even know they are a, “clean” recipe.Â

Valentine’s Day is next week?! Obviously chocolate is on my mind and in an attempt to keep things healthy because I feel so much better when real food is always a part of my life, I created a Chocolate Covered Strawberry Smoothie for me and you! Who doesn’t love chocolate covered strawberries?! This smoothie is light and just as delicious as any other sweet you are craving this time of year. Trust me. 🙂

Comfort and clean ingredients are combined in this easy recipe. Zucchini bread is to the rescue on these winter days, friends! Snow is still falling, blankets are piled on the couch, and this bread makes the house smell amazing. Winter days aren’t so bad after all. 😉
