What we’re eating this week:A lot of my Veggie Cornucopiaย and my Strawberry Rhubarb Crisp has been on repeat the last few weeks!

What I’m reminiscing about:Mother’s Day made me spend a lot of time thinking about my Grandmothers. ๐Ÿ™‚ You can read all about them, here!

What I’m loving:

My mom brought me a box of old pictures the other week. I have loved looking through all of them. So cute!ย 

What we’ve been up to:

Life has been busy! School is winding down. Italy is right around the corner. Eric has softball each week. Birthdays. Bridal showers. Baby showers. Weddings. You name it, we’re probably doing it!

What I’m dreading:

Nothing. ๐Ÿ™‚

What I’m working on:

My tan. ๐Ÿ˜‰ But I’ll also be wearing a lot of this.

What I’m excited about:

What am I not excited about lately?! There is a lot to look forward to, which is also why we have been so busy! ๐Ÿ˜‰ย 

What I’m watching/reading:After my dilemma last month with Netflix cancelling Chesapeake Shores, I decided to try Cedar Cove. I now love it and can’t stop watching. I’m such a sucker for Hallmark movies.

My Mom bought me both of these devotionals over ten years ago. I pulled them out of my desk the other day to switch up my devotions and have found some of the days so inspiring. They are short devos to read any time of day! You can buy the books hereย and here.

What I’m listening to:

What I’m wearing:

I mentioned last month how I like to keep it pretty simple with shoes over the summer, which is true. But my pair of sandals that I love needs to retire. I ordered these three pairs in hopes of loving them just as much?!

I have talked aboutย my favorite vacation to Greece, Punta Cana, and Italy but….My favorite spot is Cape May, NJ. It is the sweetest area with the cleanest beaches and has the best food! I love it!

Organic Everywhere

Eating organic as often as possible is one of the main goals in our home. Seasonal, healthy food is what we strive for in our recipes throughout the week. Some days it feels like everywhere I turn there are more tempting foods that are the exact opposite of healthy. However, organic products are also something that is at an arm’s length these days, even at your local Wal-mart.

A few weeks ago we had family over for Mother’s Day and needed to stock up on some of our favorite organic products. My homemade Strawberry Rhubarb Crisp (recipe below!) topped with Stonyfield’s Organic Greek Yogurt was exactly the seasonal dessert I wanted to serve. We grabbed a few of their yogurt’s for snacks throughout the week, and since Eric drinks milk like it is nobody’s business, we picked some up as well. Organic and affordable products that we love to buy really can be just around the corner if you just look for it!


Strawberry Rhubarb Crisp

  • 4 cups cut strawberries into 1/2 inch pieces
  • 2-4 large stalks rhubarb (or desired amount) cut into 1/2 inch pieces
  • 2 cups organic oats
  • 1 cup almond flour
  • 1/2 cup pure maple syrup
  • 1/2 EVOO
  • sea salt to taste
  • Stonyfield Plain Organic Greek Yogurt


Directions:

Preheat oven to 350 degrees. Line an 8×8 pan with the cut up fruit. For the crisp, in a medium-sized bowl, combine oats, almond flour, maple syrup, EVOO, and salt. Mix. Top fruit mixture.ย Bake for 35 to 45 minutes or until crisp on top.

Friday Favorites

A three day weekend is on it’s way…so that takes the cake for my number one favorite this week! Also, we only have four and half days of school left…which means I get to take a more serious (and closer) look at my Summer Bucket List! I cannot wait! There are definitely a lot of other goodies on my list this week though and I could really use your opinions!

Two.Last weekend we headed to VA to help Marian (Miss Mustard Seed) at Lucketts Spring Market. I felt so blessed to be able to go on this trip to experience all it had to offer. It is held at a fairgrounds with live music, yummy food vendors, and more than 200 Vintage Vendors on the East Coast. One of Marian’s readers offered their Bed and Breakfast (Zion Springs) to her and the people helping her out. It was SO gorgeous! I’m ready to go back in a heartbeat! It had beautiful land and the sweetest owners ever! Seriously, they are so gifted in hospitality. The breakfast and everything was top notch and I felt like I was in a little dream world staying there.

Three.

The Mountain Between Us

Last week, I was talking to one of my student’s parents. She was telling me all about the author, Charles Martin and how much she loves him. She spoke so highly about his writing style and stories. I’m thinking of adding some of his books to my list for the summer. Has anyone read them?

Four.

Thursday was a rough day at work. I took one big sigh of relief when I hopped into the car on my way home because I was headed to get a massage. Lord knew I needed one! There you have number 4!

Five.

I debated whether to post about this because I couldn’t decide if I really should splurge and get one. I haven’t looked into Apple Watches a lot but I am looooving what I’m hearing and I really think I’m in store for a new watch. ๐Ÿ˜‰ I’m thinking it would be ideal to have before Italy since it serves so many purposes! My questions for you are:

1. What do you know about the product? Comment with the good, the bad, and the ugly.

The luckiest Granddaughter

Travelogue

I am so thankful for all of the trips I have been able to go on over the years. However, there are some that stick out as being memorable for great and not-so-great reasons. ๐Ÿ˜‰

Let’s start with the ones that went wrong. When I was 14, I went on a missions trip with my entire Youth Group to Chicago. (I’m not sure if a missions trip counts as a “vacation” but we’re going to go with it!) My Grandma, (who I was extremely close with) was not doing well months leading up to the day I left for the trip. Naturally, that was on my mind a lot as I was getting ready to go. Then, the night before we were leaving for the trip I got SO sick and felt awful. I still went on the trip but felt sick the entire time. Fourteen hours in the car to and from, plus constantly being on the move didn’t help. I was a tough trip and one I try to forget. Ha!

Then there are those trips that you wouldn’t change a thing. Two trips easily tie in my mind.ย  My trip to Greece (and Italy)! I ate my way through the country, made some of the best friendships, and saw the most beautiful views in my entire life. You can read all about it below!
