Happy almost August?! Time is flying!

What we’re eating this week:Eric and I are both doing the Whole 30 and so far, we’re in week two. My main goal is always to eat real, whole foods anyways but the Whole 30 just helps us reset our body. Plus, it makes me stop snacking or eating ice cream as much. 😉 Here are some of my favorite Whole 30 recipes:

Egg and Sausage Quiche (Minus the milk)

Tomato Basil Meatloaf (I use ground beef instead of turkey)

What I’m reminiscing about:Gosh, babies change so much and so quickly. I’m already at the point where I look back at pictures of this little babe and can’t believe how little she was. 

What I’m loving lately:I’ve been so into trying out random coffee shops in the area. Maybe because it’s a  fun, inexpensive date-ish or a fun place to meet friends. Either way, when there’s an iced matcha on the menu, I’m in heaven. 

What we’ve been up to:

We celebrated our anniversary. We’re soaking up baby snuggles. We’re enjoying the weather. We’re spending time with family and friends. We’ve been up to a lot in the best way. 

What I’m dreading:

Summer ending. I hate it every year and cling onto it way too hard. At least I’m aware of it? 

What I’m working on:

 

Creating some more recipes for you! A lot of people messaged me on Instagram with some recipes you want to see. What I’m excited about:

I’m starting and hopefully finishing Christmas shopping soon. It seems only fitting since Christmas in July is everywhere. 😉

What I’m watching/reading:Parenthood. Are you surprised? I’m addicted and talk about the characters as if they are my friends. Ha!

Okay at first I didn’t like this song at all and now I like it. It’s so catchy and his voice is so interesting. haha I’m all over the place when it comes to music. 

What I’m wearing:I know I already posted about these jeans and I probably will again because they are amazing. They are stretchy but fitted and I love them. 🙂 End of of story.

What I’m doing this weekend:

I think Eric and I have had more date nights scheduled since Capri has been born then when I was pregnant! Ha! Either way, I’ll take it! 🙂

What I’m looking forward to next month:

Soaking up everything summer.

Weekly Meal Planning

Every Saturday (or so), I make a meal plan. I go grocery shopping Mondays after work and get everything I need for the entire week. I despise having to make extra trips to the store. So I can avoid making more than one trip a week, I try to be as thorough as I can in my list beforehand.

I love using post-its and notepads to keep a running to-do list, but using Wunderlist for my groceries has been a game changer. Seriously. Instead of worrying if I have the list with me when I go shopping, I know I’ll always have my phone which has the Wunderlist app right there. Also, Eric and I share the list which is so helpful if there is anything he wants to add at the last minute. I do write the overall meal for each night on a post-it note but then add the ingredients to Wunderlist. I have three basic categories when I am writing my list: Breakfast, dinner, and snacks. Most of the time, our lunches consist of what we ate the night before. It saves time, money, and clean up.

Since I have gotten into this routine, it has become easier each week. Whenever I’m at a loss, I look up recipes on my blog that I may have forgotten about, flip through some of my favorite cookbooks, or scroll through Pinterest. I listed some of my go-to’s below for each category. You can also shop my pantry to have a lot of the ingredients I use often on hand!

Friday, Friday, Friday! After a busy week, we have an equally busy weekend ahead filled with a lot of fun things! 🙂

Friday Favorites

It’s the first week back from vacation, and I went from feeling completely on to of things to completely behind on everything! Am I the only one that feels this way?

But it’s Friday, and I have some favorites to share! Here we go! Grab some coffee and energy bites to power through to the weekend friends!

One.

First thing’s first. We might be ordering this in the very near future because we fell in love with espresso. Of course it tasted extra delicious in Italy but I’m thinking it might be a fun memory whenever we sip it at home? Does anyone own one? Recommendations?

Two.

Before we left for Italy, I was doing a lot of research on Collagen Peptides and how it helps your body. Fast forward to Italy, and although we ate some amazing food, we ate a lot of pasta and bread that my body isn’t used to. I decided to get my butt right back into gear after we got home and I ordered some! It promotes youthful skin, healthier hair, and stronger nails, while keeping your bones strong and healthy.

It comes in powdered form, which was perfect for putting into two (one. two–on this smoothie I left out the protein powder) of my smoothies this week. You can’t even taste it! Three.It’s our second anniversary on Monday, so we have a nice little weekend planned to celebrate! Gosh, I love him! But the real anniversary gift for us was Capri! You can see the post here! I’ll be recapping Tuscany and Florence next week!

Best Recipes

We got back from Italy late Saturday night after 11 days of unplugging and exploring, and I think it was just what we needed! It was an incredible trip and I can’t wait to recap it for all of you! (Once I’m caught up on laundry and not quite as jet-lagged). ;)You can see a sneak peak of pictures, here!  Needless to say, because of that, it’s been a little quiet around here and a part of me definitely missed all of you!
