Easy Peasy Cobb Salad

Ingredients

  • All of these amounts were based on what I used for one salad. You can use as little or as much as you'd like! 
  • 3 to 4 cups of mixed greens
  • 2 hard-boiled eggs (sliced)
  • 4 slices avocado
  • 1/4 cup cherry tomatoes (sliced)
  • 1/3 cup feta
  • 1/4 cup cooked bacon (cut into cubes)
  • 4 green onions (chopped)
  • Primal Kitchen Green Goddess Dressing
  • Pink himalayan salt and Pepper to taste

Instructions

  1. Start with a bed of mixed greens. Top with all ingredients. Drizzle with this dressing and sprinkle with S & P.

Friday Favorites

This week was a rollercoaster of emotions. It started off dreary and cold and ended up beautiful, sunny, and warm! I went from feeling great, to contractions and no sleep, to feeling great again. But hey, everyone is healthy and I’m thankful for that!

One.

I updated my shop page with some really random things that you have made an appearance on here before but have become staples in my life lately. I’ll be adding some more summer things over the next few weeks too! 🙂 Be sure to keep checking back!

Two.

I ordered this shampoo and conditioner because of their amazingly clean ingredients and cannot wait to try it! Has anyone tried this brand before?!

 

Three.

I’ve mentioned several times that I have really bad allergies. The combo of these three oils really has helped with this time of year where everything is in full bloom and allergies are wanting to go crazy!

Four.

I don’t think I’ve ever talked about these sheets before?! I just ordered another set because I love them so much. They are comfortable, great quality, and an even better price! (Even for our set of California King sheets since my husband is a giant).  🙂

Five.

Whenever I’m having a salad or something that requires dressing, I make it from scratch. It’s really easy and I know all the ingredients that go into it. Sometimes though, I just need a dressing made for me and different than I normally make. Primal Kitchen has really clean ingredients and is SO good! So when I found this at our local grocery store the other day, I was so excited! 🙂

Freezer Meals 101

The other weekend Eric and I made A TON of freezer smoothie packs, snacks, and meals to have on hand when the baby comes. Our biggest question was: Why have we not done this before?! We got so much accomplished in a short amount of time and had so much fun doing it. We opened the windows, put some music on, and tag-teamed the entire process. I included the links of all the recipes we made from yours truly. Baby on the way or not, enjoy! 🙂

Smoothies: I made a few packs of my Blueberry Ginger Smoothie. All the ingredients are included in the freezer bag. The only thing that needs to be added when I go to make it is coconut water and Vanilla Vital Proteins. Easy!  I made a few packs of my Aloha Smoothie. I can either follow the exact recipe for the Aloha Smoothie or add more yogurt and ice for a smoothie bowl. I also added some fruit to a freezer bag to have on hand to add to a fruit smoothie. 🙂

Snacks:My Energy Bites are deliciously amazing on their own, with coffee (which I’m sure I’ll need) or with milk! I made a batch of these and froze them in a freezer bag to have on hand. *I substituted the chocolate chips for cacao powder this time around.*

Main Meals: I love how flavorful and yet simple this meal is. We cut up all the veggies to freeze and then had the roast freezer wrapped. I wrote the directions right onto the freezer bag so I can toss everything into the crockpot in the morning and have dinner ready that night. My favorite! 🙂I also made two batches of my Taco Soup. I cooked everything, let it cool, and then divided it into tupperware containers before putting it in the freezer. I’ll place both main meals in the refrigerator the night before I plan on having them/placing it into the crockpot.

Oh So Delicious Salmon

I have made this Salmon with Avocado Salsa recipe several times and love it! I made a few switches though. Instead of doing the salmon on the grill, I cooked it in the oven at 350 degrees for 25-30 minutes. I made this recipe twice in two weeks–two different ways. I made Banza Chickpea Pasta, added some salt and pepper, and topped the pasta with the salmon and salsa! De-licious! The next week I made cauliflower rice in lieu of the pasta, topping it with the same flavorful salmon and salsa. It looked like I slaved for hours, when in reality it’s one of the easiest meals. 🙂

Friday Favorites

One.

Baby Spring could be here any day, so I’m trying to savor the last few moments with my students. One of my very favorite projects each year is a Tangram Project we do. We read Grandfather Tang’s Story, talk all about the history of tangrams, and then they recreate the tangram figures throughout the story. It’s great geometry lesson and for spatial reasoning skills.

Two.

The sun was shining this week. THAT is a favorite! 🙂

Three.Do you guys remember these Peanut Butter Banana Blender Muffins from Seven Layer Charlotte forever ago?! I made them last week and forgot how easy and delicious they are!

Four.

When the baby comes I’m going to take a few weeks off from blogging. It may be more, it may be less, just depending how everything goes. But in the meantime, I have some guest posts that I am super excited for you to read as I soak in baby snuggles.

Five.

At our Baby Shower, they had thee cutest little setting at every single seat! Unfortunately I didn’t get a picture of it but they had advice cards, baby predictions, and cake pops shaped into rattles. It was the cutest! Eric and I both loved going through all the advice and predictions. If you are a hosting a baby shower, these are a must-have! I linked a bunch for different types of showers! 🙂
