B-Corp Certified + Blueberry Crumble

A better wife. A better daughter. A better sister. A better friend. A better version of myself. It’s a constant balancing act of trying to be better. Although at times it can feel like a daunting task, the desire to be better is what keeps me moving forward. I’m constantly drawing strength from something higher than myself in every situation because Lord knows we could all use a little extra dose of strength and patience along the way in life.

In the midst of balancing so many hats, I truly believe the start to bettering myself comes from the inside out. You are what you eat friends. (And also the products you use). With all the crazy marketing out there how do you really know what IS better? I’ve teamed up with a few companies who are B-Corp certified and have the same mission I do on a daily basis so I can be rest assured that what I am using and eating is good for me.

B Corps are for profit companies certified by the nonprofit B Lab to meet rigorous standards of social and environmental performance, accountability, and transparency. B Corps are better companies – better for workers, better for communities and better for the environment. Taking simple steps on a daily basis to better yourself and loved ones has never been easier. Blueberry Crumble


Ingredients:



What to do:

Preheat oven to 350 degrees. Pour blueberries into a loaf pan and set aside. In a medium-sized bowl combine flour, oats, maple syrup, EVOO, and salt. Stir until completely mixed. Pour and spread on top of the blueberries in pan. Bake for about 45 minutes or until the top is brown and/or fruit is bubbling. Remove from oven and top with granola and a large scoop of Stonyfield’s Organic 100% Grassfed Blueberry Greek Yogurt.

Friday Favorites

The weather was absolutely gorgeous this week, which automatically puts me in such a good mood. 🙂 It has been in the 70’s and I love it! Is it just in PA or are other places experiencing it being warmer too?! Clearly, I haven’t watched the news lately. 😉

One.

Since it has been so nice out, I’ve been breaking out my two denim shirts to layer. They are an ideal in between for these temperatures. I have one from Garage (similar, here) and one from Target, (similar, here).

I found some other fun ones that I may need to add to my wardrobe since I am going to puuuuuurge my closet like it’s my job very soon!

Two.

Here’s the deal. Over the summer we were doing the Whole 30. I was planning on making a taco salad when I realized I couldn’t break tortilla chips on top since they aren’t Whole 30 compliant. The recipe I was following suggested these plantain chips from Trader Joes. I loved them in the salad and then found myself snacking on them by themselves throughout the week. I love them! I just ordered some more this morning for snacking and for a salad next week. Plus, they really are a lot healthier than tortilla chips so it’s a win all around. 😉

Three.My Sweet and Savory 30 Minute Chili because Thursday was National Chili Day. Who knew? 🙂 You could crumble the plantain chips on top of this too!

Four.

I got a massage on Tuesday and that is beyond a favorite of mine!

I loved all the comments about Friday Night Lights from my post on Wednesday! Low and behold, my sister-in-law informed me that she loves the show AND has a Tim Riggins shirt! WHAT?! I didn’t even know they made them and now I want one. 🙂 You can buy it, here! It even has his name on the back. 😉

What we’ve been up to:

Eric and I went to Family Life’s, “Weekend to Remember” Marriage Retreat this past weekend. It was absolutely amazing and I would highly recommend it!

Well, it’s more what I’m afraid of…but I’m dreading that we’re going to have snow after having such nice weather this past weekend!

What I’m excited about:I was thinking of all of you as we are starting to plan the details of our trip to Italy. So many of you responded when I mentioned that we booked the trip and I love that! What are your favorite places in Florence or Capri?! Restaurants, wineries, shops, etc….:)

What I’m watching/reading:Clear eyes, full heart, can’t lose. I am slightly obsessed. We finished the first season in a week. Oops. 🙂 

This book was recommended at the conference this weekend. I can’t wait to read it!

What I’m wearing:

I feel like I have been in my classroom as much as outside the classroom for conferences and I’ve been wearing a lot of these. It’s always good to have a good pair or two of black dress pants in your closet. 

What I’m doing this weekend:

My sweet, sweet Grandma’s church has a lasagna dinner each year to support their missions trips. Eric and I have gone the last two years and that’s about all our weekend consists of. Just the way I like it. 🙂 

What I’m looking forward to next month:

More sleep?  😉

What else is new:

We have thrown the idea around about adding an accent chair to our living room and we might make the plunge soon. Thoughts? Kriste told me about Home Decorators Collection and I am in love!

Friday Favorites

It’s one of those weeks where counting your blessings comes extra easy. They are flowing all around and I’m so grateful.

One.

Eric and I agreed not to do much for Valentine’s Day. But, when I got home on Tuesday I found a bottle of wine, flowers, and a note. One of the notes said to check the freezer which had Talenti was in it.  #win We did nothing fancy and I loved that. As I poured myself a glass of wine, I realize that I always reach for these. They have held up so well, are dishwasher safe, and I love using them.

Two.Remember in November I talked about how much I love this bag from Urban Southern? Well, these beautiful ladies were styled three collections at NYCFW with their bags and launched their new Spring line! It is absolutely beautiful!

In December when I talked about my Home Tips and Tricks, several of you purchased this ottoman. I don’t blame you, it’s the best! (Sidenote: It’s on sale right now!) I think in most homes, we’re all craving a little more storage that looks nice and can hide the things we need to store. Which brings me to these baskets. I wasn’t crazy about them at first because I don’t like the feeling of them. Weird, I know.

The other week I did some organizing and used these baskets to store our movies in our entertainment center. I looked at them the other day and now I can’t imagine not having them there. They hide the clutter and are sweet, yet simple. Plus, they are inexpensive. If you like the smaller version, you can also buy these khaki or cute floral liners to go along with them!

It’s a win all around, and it’s a Friday, so treat yourself. 😉 Happy Friday!
