One. Last week was a rollercoaster of emotions and I didn’t feel well on Friday. On Saturday though, Eric surprised me with a trip for my birthday. It was possibly the sweetest thing he has ever done and the weekend was perfect! Incredible food, amazing weather, and just quality time away. 🙂 I posted a few more pictures, here.

It. Is. Friday! Yay! We had parent-teacher conferences (which I love!) on Wednesday and Thursday which leads me to my very first favorite of this week…
One.
…I am probably still sleeping as you read this. 🙂 That my friends, is a favorite after a long week! We also have off for Columbus Day so I am SUPER thankful for a four-day weekend to catch up on life. 😉 I’m also almost positive that anyone who knows me well can vouch that I need my sleep! Ha!
Two. I also did two activities this week with my students that have been of FAVORITE of the year so far. I feel like students need many different representations of fractions as possible to really grasp the idea of what a fraction is. I found this fun activity and the kids had a blast making the kites! 🙂
Three. Thanks to Andrea, I also talked to my class about the importance of brightening someones day. We made these cards and the kids were SO sweet and excited about them! It made my week! 🙂

My No-Bake Pumpkin Cocoa Energy Bites are so simple and festive for this time of year. Who doesn’t want some pumpkin, chocolate, and energy?!

It’s Friday and boy am I thankful for it because I am ready for a weekend! I have meetings all day at school, we’re headed to my hometown fair, and then a wedding tomorrow! 🙂
One.Our hometown fair is a FAVORITE of mine every year! (Eric and I don’t live in this town but it’s where I grew up and still so fun to go back!) Ah! The fair has been a big part of my life and I have never missed a year. My Mom has been going since she was 10 years old. When my Dad and Mom started dating, he started going and he now hasn’t missed a year since. My Grandma used to be the head of the kitchen committee and then my Mom took over after she passed away 14 years ago.
I have memories of helping out in the kitchen every single night of the fair and loving every second of it. It holds so many memories and I am SO thankful for them. Plus, the funnel cakes, pork barbecue, and milkshakes hold a special place in my heart too. 😉
Three.I went to an apple orchard on Sunday and oh my goodness…it was SO fun and should be added to your bucket list!
Four.
Eric and I had a breakfast date on Thursday and that always starts the day off right. 🙂
Five.
Thanks to Food Babe, I’ve been making my own coconut milk. It’s actually cheaper than buying it in the store, ten times healthier, and even tastes better! I used this canned coconut!
