Deserted Island + Strawberry Banana Smoothie

Strawberry Banana Smoothie Recipe at: stephanie-spring.comStrawberry Banana Smoothie Recipe at: stephanie-spring.comA strawberry banana smoothie is obviously necessary if I’m going to be stranded on a deserted island right?! 😉 This smoothie is such an oldie but a goodie that I have made for over ten years now and it deserved to be in the spotlight. It’s refreshing and perfect for these summer days!

Stranded WithI realized as I was sipping my smoothie, that three famous people I would want to be stranded on an island with are similar people to who I would invite on a talk show. I guess I just really love these people and I’m totally fine with that! 😉 An author, actress and designer? Please and thank you! And Shay and Erika of course. 🙂shauna-niequistReese Witherspoon launches her new Southern-inspired lifestyle brand Draper James fashion line.o

Shauna Niequist: I know I’ve talked about her over and over again and you’re probably sick of it but her insight when we’re stranded on an island would be a must. She’s insightful, witty, and has faith that is so inspiring. Plus, she loves good food. 😉

Reese Witherspoon: How could I not choose her? She’s fun, talented and I feel like it would be a blast to have her along on a deserted island. I would definitely want her there!

Joanna Gaines: How she runs a business, has four kids, and is in that good of shape is what I am dying to know. I want to learn all about her faith, family, and decorative tips and tuck all those words in my back pocket for when I’m off the island.

All six of us on one island sounds SO fun, minus the being deserted part. 😉

Homemade Lemon Larabars

Lemon Lara Bars Recipe at: stephanie-spring.comLemon Lara Bars Recipe at: stephanie-spring.com Lemon Lara Bars Recipe at: stephanie-spring.comThere I am in the organic aisle and it’s as if they are calling my name. Larabars: 10 for $10?! How could I not pick them up? (Sometimes I’m even tempted to get twenty. Shh!) They’re the perfect guilt-free grab and go snack to have on hand and so tasty!

A few weeks ago one of my friends mentioned how she made homemade larabars. In that moment, it was as if the stars aligned! Why had I not thought about this before?! Fast forward to last Thursday’s To-Do list that had one thing written on it. One thing. There were no excuses or putting off testing and trying out my very favorite flavor of larabars in our very own kitchen. I expected the trial and error of making these at home to take a few attempts but to my giddy surprise, it didn’t! I guess when something has so few ingredients, you can’t really mess it up! They’re simply delicious, healthy, and easy.
Lemon Lara Bars Recipe at: stephanie-spring.com

Ingredients:

  • 3/4 cup unsalted cashews
  • 1/2 cup unsalted almonds
  • 1.5 cups packed pitted dates (I cut the dates in half so they could be packed better)
  • 3 Tbsp fresh lemon juice (about the juice from one lemon)
  • 1/4 tsp salt

What to do:

Pour the almonds and cashews into the food processor and pulse a few times until they are semi-chopped. Add all the remaining ingredients into the food processor. Pulse a few times and then on low or until it starts forming together into a sticky mixture. Line an 8 x 8 pan (or really any pan) with wax paper. I used a spatula to flatten the mixture into an even consistency in the pan. Smooth out the top and edges. Place in the refrigerator for 2 hours. Cut to desired width. Store in an air tight container in the refrigerator or counter.

Open-Faced Breakfast

Open-faced Breakfast Sandwich stephanie-spring.comOpen-faced Breakfast Sandwich stephanie-spring.comI love slow mornings just as much as productive ones. I love being spontaneous as much and I love routine. I love new creations as much I love go-to’s. The other morning I tried my hand at mixing some flavors together and embracing the unknown of how it would turn out. This is 100% Eric’s forte more than mine. That being said, after the first bite I think I gave him a run for his money. 😉

Ingredients:

  • One bunch of green onions, washed and diced
  • One organic egg
  • One piece of Ezekiel Bread
  • 1 and 1/2 Tablespoons Vegenaise
  • 1/2 an avocado
  • Homemade ketchup (found, here!)
  • 1/2 Tablespoon of unsalted butter

What to do:

In a small pan, melt the butter on medium heat. Add three fourths of the green onions. Stir until they are slightly browned. Add the egg over the green onions in the pan. Toast the Ezekiel bread. Once it is toasted, spread the Vegenaise onto the toast, followed by the avocado. Use a fork to slightly press the avocado into the toast. Place the cooked egg and green onions on top of the toast. Place one tablespoon of ketchup onto the egg and sprinkle the remaining uncooked green onions on top. I use a forked to eat it and savor every bite!

Infused Water

On the summer days that are quickly approaching, I’m going to try my best to savor all the moments. What I love the most about summer is the simplicity of it all. I’m trying to soak up every sound, feeling, and flavor. After an intense workout or a lazy afternoon by the pool, a little somethin’ somethin’ in your H2O can be a party for your taste buds. Infusing water with staples around the house and mixing and matching summer flavors awakes all the senses. Summer is so beautiful and your water can be equally as a pretty with just a smidge of effort. Slicing and dicing fruit into your water infuses such beauty and makes it seem even more vibrant and fragrant in the summer months.
