Friday Favorites: 30.

Happy Friday! Today is Eric’s birthday. But it’s not just any old birthday…it’s his 30th! I thought it would be fun to fill you in on who he is with 30 random facts about him. He has z.e.r.o. idea that I’m doing this so feel free to wish him a Happy Birthday in the comments because I know he will read this post. 😉

Here we go!

  1. He played baseball in college.
  2. He has great hair.
  3. He’s the best Dad (and husband).
  4. He is an amazing cook.
  5. He brews his own beer.
  6. He has more hobbies than anyone I know. No joke.
  7. One of them being riding bike.
  8. He hunts. (One of my Dad’s favorite qualities about him). 😉
  9. He’s an engineer.
  10. He LOVES researching things.
  11. He is one of the most positive people I know.
  12. He looks for the good in every single person.
  13. He loves being outside.
  14. He’s 6’7”.
  15. When he asked me out I gave him a million reasons why it wouldn’t work and basically told him we’ll end up breaking up. (So nice of me, right?) I changed my mind quickly. 😉
  16. That being said, he’s the most patient person I know.
  17. He was a left handed pitcher in baseball but is right handed.
  18. He enjoys the simplest things: A good thunderstorm, the changing of seasons, sipping coffee.
  19. I love how he takes me back to the basics of things as stated above.
  20. He writes A+ handwritten notes.
  21. We lived two and a half hours apart while we were dating.
  22. He’s a head usher at our church.
  23. He’s great at surprises.
  24. He doesn’t like making a big deal of his birthday. So I do it for him. 😉
  25. He loves fine dining but when you ask him what his favorite food is he will almost always say, “Peanut Butter and Jelly with a tall glass of milk.”
  26. He used to drink a gallon of milk a day when he was younger.
  27. …is his favorite number.
  28. He’s Italian.
  29. He was the first person to hold Capri when she was born and basically was on diaper duty, etc. for the first week thanks to a C-section.
  30. 30 years just flat-out looks good on him.

September 2018

It’s the end of September and almost October. Crazy! If you would have told me in May that I would be doing a happy dance and soaking up this season more than ever before, I would have laughed because I normally scream summer from the rooftops. Fall is trying to be in the running for my favorite season these days. I hope everyone had a great month and here’s our recap of September!

What we’re eating this week:My Winter Greens Salad and Braised Beef Short Ribs.

What I’m reminiscing about:Last year I was pregnant for this apple picking adventure and the only people that knew were Eric and I. We went to hometown fair just days before this where we saw both sets of families without saying a word and numerous friends in the meantime. It was the best kept secret and I cannot believe it was an entire year ago. I could reminisce about this all day long. 

What I’m loving lately:London Fog’s. My Mom and I went to a cafe for her birthday where she ordered one. She asked if I wanted a sip and I proceeded to tell her I didn’t like them. But I gave it a try and loved it! hahah She showed me. 

Now I’m trying to recreate one at home at least weekly. 😉 

What we’ve been up to:Fair season! I have been going to my hometown fair since I was a baby and haven’t missed a year. It was so surreal going as a family of three this year and honestly, it was the best year yet!

What I’m dreading:

Colder temperatures. I feel like we’ve hit a sweet spot and I don’t want it to end. 

What I’m working on AND What I’m excited about:I have TWO giveaways for every single reader, friends, and family coming up! One is to help you snuggle up to fall a little more and the other is for anyone who likes food! (So, everyone!) 😉 Keep your eye out for it!

Apple Cinnamon Pancakes

Apple Cinnamon Pancakes--Recipe at: stephanie-spring.comYou don’t need the weekend to roll around to make these but man oh man does it make it extra special. The snail-like pace adds an extra touch to the taste buds if you ask me. 😉 However! Having these pre-made for the week as well is an A++ in my book! Apple Cinnamon Pancakes

Ingredients

  • 1 cup Stonyfield Plain Organic Greek Yogurt
  • 2 eggs
  • 1 cup oats
  • 1 apple (cut into bite-sized pieces)
  • 1 tsp cinnamon (plus more to sprinkle on top if desired)
  • 1 Tbsp butter
  • Maple syrup (for topping)

Instructions

  1. In a skillet, on medium heat, add butter. Let it melt and then add the chopped apple. Stir occasionally for 10 minutes as it becomes tender. *Make sure you stir to avoid burning.
  2. Combine yogurt, eggs, oats, and cinnamon into a blender. Blend until smooth. In a large bowl pour the batter and fold in the cooked apples. Do not skip this step! Adding the apples to the batter once they are in the pan will make it cook unevenly.
  3. In a greased (I used butter) pan, pour batter/apple mixture to desired pancake size at medium heat. Flip the pancake when the edges start to bubble (about one and a half minutes). Cook for about another minute. Top with maple syrup and a sprinkle of cinnamon. Enjoy!

Friday Favorites

One.

Ladies! The temperatures have been a little cooler. It is fair season. I had the best milkshake and funnel cake last night. (‘Tis the season!) AND it’s Friday! This weekend we have small group, some down time and we’ll be with friends and family. I have never, ever eagerly welcomed fall so much, which counts as a favorite today!

Two.

I asked all of you on Instagram what baby book you love. I went back and forth as to what I wanted to record special moments and memories. I tried an app, and liked it but didn’t love it since I wanted to add my own personal touch. Multiple people mentioned Promptly Journals. I love the look and although I may not fill out every page, I wanted a space to put some of our newborn pictures along with her firsts. I ordered one and LOVE it!

Three.

If you’ve been around for awhile on here, you know I love First Aid Beauty Ultra Repair Face Moisturizer. I finally became a little more wise and started ordering it on Amazon instead of taking a trip to Sephora just for this one item. (Even though a trip to the mall is needed sometimes). It’s still sold through First Aid Beauty and my skin feels so great!

Four.

I’ve used it before when babysitting but knew we didn’t need it right away when Capri was born. She’s getting to the point though where we wanted her to be able to sit up and have our hands free. It’s been a game changer! Favorite, favorite, favorite! Plus, it will be easy to transport when we travel. I ordered the
Bumbo Multi Seat because it lasts 6-36 months instead of just the seat, which only lasts until 12.
