My sister declined and preferred more sleep, and I excitedly said yes, wanting to be in on all the action. My Mom was in charge of setting up all of the food for a crowd full of people who came after a lovely sunrise service, recognizing the real reason for celebrating Easter in all of it’s goodness. They came with full hearts and empty stomaches, ready to eat some yummy breakfast foods while sipping hot coffee to take off the chill from the outdoors.

My Mom and I would drive to a local bakery, picking up dozens of muffins and donuts galore. When we got to church, we poured endless cups of chocolate milk, prepped the coffee, cut each muffins perfectly, and delicately arranged each donut in beautiful fashion. The breakfast after the sunrise service is a memory I think back on every Easter. After focusing on the real reason of Easter, I quickly think of going to a local bakery and picking up food for dozens of people.

Don’t get me wrong, I’m the first to indulge in something to cure my sweet tooth, but as this season rolls around, I wanted a tasty alternative to the norm. A memory that left my heart and stomach feeling happy. 🙂 These healthy muffins are filling and chocolatey, leaving nothing to be desired. They are without-a-doubt the best when paired with coffee and slowly eaten with the ones you love during the Easter season.

Ingredients:

  • 3 cups super-fine almond flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 Tbsp whole ground flax seed meal
  • 1/4 cup unsweetened dark chocolate cocoa powder
  • 2 ripe bananas, mashed
  • 3 eggs, beaten
  • 1/4 cup almond butter
  • 4 Tbsp pure maple syrup
  • 1/2 cup dark chocolate chip morsels

 


What to do:

Preheat oven to 350 degrees. Combine all dry ingredients (except the chocolate morsels) together in a medium-sized bowl. Set aside. Combine bananas, eggs, almond butter, and maple syrup together. Whisk. Fold in dry ingredients with wet ingredients and slowly add morsels. Whisk until thoroughly mixed. Place muffin liners in a muffin tin and fill each liner about three quarters full. Bake for about 30 mins or until you stick a toothpick in and it comes out clean. Pour some coffee and enjoy!

Friday Favorites

This week was a smooth one! God completely blessed me with a great week after a really difficult one last week. To top it off, I have the day off today and we have a wedding tonight for such a sweet couple. 🙂

One.I know I talked about these jeans here but when you are picky about jeans and find a good pair, you spread the word. 🙂

Two.You know I’m a fan of, ‘with lavender and grace,’ and I think this pillow would look perfect on our new chair!

I got this dress from one of my friends for the wedding tonight and I love it!

Five.

It is pouring rain today and it’s supposed to do the same all next week…I’m sure glad I have these now. 🙂

We had a storm a few weeks ago, which brought a lot of hail and totaled my car. So, we have been car shopping for an SUV. Any car tips?

What I’m watching/reading:Last year I talked about how addicted we got to the Great British Bake Off (GBB). They released two new seasons on Netflix and we became obsessed all over again. We finished both seasons in two weeks. How cute are some of their books? 

Eric has been on a breadmaking kick ever since we watched the show and wants to buy this book. I kind of do too!) I also feel like I should buy Mary Berry’s Baking Bible just to have on hand in my kitchen because I adore her.

This cardigan in pink. (Similar here and here). I also bought these Gap jeans and I looooove them! Just not those shoes. 😉 ha

What I’m doing this weekend:

Wedding! By the end of this year, we will have gone to 30 weddings in three years. I would like one big piece of wedding cake to celebrate. 😉

My top five (or so 😉 ) pictures could have been picked a million different ways. But so far, these are some of the most important ones that stuck out to me. They aren’t necessarily the ones with the best lighting or the fanciest occasion. (Although a lot are from our wedding, which I loved!) But these are the people, places, and experiences that I hold nearest and dearest to my heart and I wouldn’t be who I am today without them. Cliche, but true. xoxo

Friday Favorites

This week was a challenging and draining one. I started off sick, and the rest of the week in school and everything else was a whirlwind! I am so, so thankful it’s Friday! Amen? Amen!

One.Other than my homemade granola, I have been loving this granola. Since we are Amazon prime members, this actually ends up being cheaper than in most stores and it’s delivered right to our door. 🙂 You can buy it here! 

Two.

Before I started feeling under the weather, I went to shower one of my sweet friends at her baby shower! I’m still dreaming about this cake. How cute is it?! And can you tell she’s having a girl? 😉

Three.
Last night on a whim, we went out to dinner with friends and I downed some fish tacos that are my faaaaav! They made me think of this recipe and how I need to make it again soon! 🙂

Four.

       

I’m going shopping this weekend and have my eye on a few things. Maybe I’ll snatch something like this up to keep in my closet for next year also!
