Bacon and Spinach Quiche

Bacon and Spinach Quiche--Recipe at: stephanie-spring.com Quiches have been my saving grace in the morning for a filling and healthy breakfast. Since this is a crustless quiche, it isn’t quite as, “heavy” of a dish…which I love! (A.k.a..I don’t feel bloated after eating it!) In some of my previous quiche recipes (here and here), I added milk (which you still can if you’d like) but this can easily be dairy free or catered to Whole 30 as well if you forego the feta. I love the combination of flavors and anything with bacon is flat out heavenly. Which brings me to, my Bacon and Spinach Quiche! Here you go! Not having crust makes it feel much lighter than most quiches. In some of my previous quiche recipes, I added milk (which you still can if you’d like) but this can easily be catered to Whole 30 as well if you forego the feta. Bacon and Spinach Quiche

Ingredients

  • 4 pieces bacon
  • 6 eggs
  • 1 cup fresh, chopped spinach
  • Feta to sprinkle on top (optional)
  • S & P to taste

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cook the bacon and set aside to cool. Chop the spinach and set aside. Once the bacon is cool, break into bite-sized pieces.
  3. Grease a pie pan (I used butter) and evenly spread spinach and bacon onto the bottom. In a separate dish whisk eggs. Pour egg mixture over spinach and bacon. Sprinkle salt and pepper to taste and desired amount of feta on top. Bake for 25-30 minutes.

No one ever told me that life with a newborn was going to be so much fun! Our little babe will be three weeks old tomorrow?! We were blessed beyoooond belief as people showered us with gifts as we prepped for life as a family of three. Since she is still so little, there have been some items that we haven’t used just quite yet and there are others that I use every single day. We registered at Amazon and Target and loved both! People could shop in the store or online and we were pleasantly surprised when we saw that most people chose Amazon. (I mean, I totally get it). 😉 I compiled a list of essentials that in these first 3 weeks have been SO helpful in one way or another. I’ll do an updated list of favorites once she’s a little older and uses more things. 🙂 In the meantime, shop around! I’ll also add this to my shop page so it’s easier to find at all times! Vacation Mode


Three summers ago, we were in Punta Cana for our honeymoon, relaxing and soaking up every moment. Two summers ago we were in Colorado exploring as much as we could possibly take in. Last summer we were in Italy in all our glory as we visited Capri (great name, right?! ;)),Tuscany, and Florence.

This post is more focused on asking your advice on prepping for a vacation we plan on taking next summer. With a newborn, we aren’t going any long distances in the next few months but next summer Eric and I plan on going to Napa Valley, CA. If you have been or live nearby, what are some must-see places?!

  1. Combine all ingredients into a quality blender. Blend until smooth and top with Purely Elizabeth Ancient Grain Granola.
