My arms are wide open for ya September! 🙂 Cooler temperatures bring all things warm and cozy around here. First up on the list to make the transition easy and fun? These muffins! In the last week, I maaaay have made these three times. They are delicious and have every element of fall wrapped into one little muffin tin. Whether you are gluten-free or not (we aren’t) these are tasty and warm the heart! Enjoy! xoÂ
Preheat oven to 350 degrees F. In a skillet, on medium heat, add butter. Let it melt and then add the chopped apple. Stir occasionally for 10 minutes as it becomes tender. *Make sure you stir to avoid burning.
In a medium-sized bowl, combine almond flour, cinnamon, baking soda and sea salt.
In a separate bowl, combine eggs, maple syrup, vanilla and coconut oil.
Combine both mixtures together. Once it is mixed together, fold in the apples.
Fill a muffin pan with liners. Fill each liner with batter about three quarters of the way full. Sprinkle with cinnamon. (Optional)
Bake in oven for 15-20 minutes. Once a toothpick can be inserted and come out clean, you are ready!
Today’s a little different for my favorites. Gift giving is not high on my love language scale but the idea of paying it forward or random acts of kindness has really been on my heart lately. After having Capri my best friend stopped by with such a meaningful and thoughtful gift. She knows me well and filled it with some of my favorites. It meant so much and I encourage you to think of someone you can do the same for. It doesn’t have to be post-baby, it can be for any occasion or just because. Customize your heart out and have fun with it! Here are some fun ideas to put together.
ONE.
Put everything in one of these bags as part of the gift.Â
TWO.
Their favorite book or a devotional.
Â
THREE.
A notepad and some fun writing things.Â
FOUR.
Add a bag of coffee, box of wine, or their favorite snack. A gift card always works too!
It is the end of August. HOW?! Here’s a recap of our July! 🙂
What we’re eating this week:Chocolate Chipotle Sweet Potato Chili. The recipe is coming soon for you! It’s so easy, made in the slow cooker, and is perfect for fall. 🙂MY WEAKNESS. Make it yours too, so I’m not alone. 😉
What I’m reminiscing about:Remember when I studied abroad in Greece and met all these lovely people? 🙂 I’ve been reminiscing about Ashley’s wedding last year and how we were all reunited. I want to do this all over again! And their venue was at a beautiful winery! Ahh!
What I’m loving lately:
The days have been a much slower pace and I am soaking it all up!Â
I also asked all of you about tanning lotion and recently bought this kind. So far, I love it. It doesn’t turn your skin orange, you only need to use it about once a week, and it doesn’t stain or streak. (It’s also a 1 on the EWG!)Â
We’ve also had a bouquet of flowers in our home all summer long. I love that. 🙂Â
What we’ve been up to:Watching this little one grow by the day! On Sunday she was three months old. 🙂Â
What I’m dreading:
This humidity sticking around. Ugh. I sweat just walking out the door.Â
What I’m working on:
Cleaning out every closet. I donated so many things to the local thrift store and it’s like a weight was lifted off my shoulders.Â
What I’m excited about:
17 weeks until Christmas. hahahaha We also have a trip coming up! 🙂
What I’m watching/reading:
We’re still watching Parenthood. Shocker, right?! 😉 We watch an episode a night and I honestly love that it’s taking us so long to get through it because I have no idea what I’ll watch when it’s over. haha Suggestions?
Ladies, this book is a must-read. It is so good and shed so much light on loving people and becoming free. Be sure to take a look at this list that I compiled from all of you!
What I’m listening to:Jen Hatmaker’s Parenting series has been so good!
What I’m wearing:
              Â
I’m not currently wearing these but…I did find these! When I was donating things at the thrift store I browsed around a little bit and found these!Â
The chocolate peanut butter combo used to never be a thing for me. People that always raved about it, just weren’t totally my people. Just kidding, I just couldn’t really relate…until about three years ago. Now it has me wrapped around it’s little finger and I don’t see an end in sight. It’s fine. I’ve come to accept it. (See? And here.) For good measure (and because I genuinely loooove it) I added greens to this smoothie bowl. Don’t let the color fool you. You can’t taste it at all. It’s just an added perk to this deliciousness! Plus, it keeps you extra full all morning long!
Summer is my very favorite season of all. Everything about it speaks my love languages and I can never get enough. And although I would not trade a thing for the time of year that Capri was born, being in the heat of the summer by the pool isn’t exactly cut out for a newborn. That being said, I am welcoming fall this year with open arms as it quickly approaches. Don’t get me wrong, I love fall and there are so many fun things about it each year. This year though, I think I’ll savor the cooler temperatures and activities with a little more appreciation.Whenever fall is right around the corner, I always, always, always have a desire to watch this movie. Anyone else? ($2.99? Rent it!) It invokes so many cozy feelings that I associate with fall. Drinks, decor, and well…books. I asked all of you on Instagram what your must-read books are and to send me your favorite fall drink. YOU GUYS BLEW ME AWAY! Thank you, thank you, thank you! I compiled a list of a few of both things because they were just too good not to share! Cozy up with one of these books and a warm drink in your hand. Fuzzy blankets never hurt either! Enjoy! xo
Your Favorite Drinks:Â Hot Apple Cider, Pumpkin Chai, Pumpkin Coffee, Coffee with milk and pumps of pumpkin, and anything pumpkin when the time is right.
