One.On Sunday we had a surprise baby shower for Sheri. I loved celebrating Baby Long! 🙂
Two.Eric, Gilmore Girls, and little bit of Talenti was a successful and favorite Saturday night.
Three.Getting together with a group of friends to watch hometowns this week was obviously a favorite.
Four.Lara bars are one of my favorite snacks and I think I decided lemon is officially my favorite kind. Amen.
Five.Our flights are officially booked and we are going to Colorado! How could this not be a favorite?!?! Eric has always wanted to go, and after living there for a summer, I am so excited to show him places I’ve been and explore new ones with him. It is absolutely beautiful and we are so ready for a vacation!

2. What I’m reminiscing about:It has been almost five years since I left for Greece and called it my (temporary) home. I’m feeling super nostalgic and reminiscent lately about all the memories that trip holds.

Our schedule has been jam-packed with great things but I am so ready for a slower summer pace!

Although I love traditions, we don’t really have any Easter traditions other than being with family. I am perfectly fine with that after how busy this season of life has felt. 🙂 Although I wouldn’t mind if this became a tradition. 😉 What are some of your fav Easter traditions?
One of my favorite parts about the week is planning our meals for the following week. We really try to switch it up throughout the week and from week to week.
Other than the recipes of my own that I post, here are some of my favorite go-to recipes that I make time and time again. I mentioned a few in my favorite Pinterest pins, here. Although I do love Pinterest, I equally love a good cookbook. Some of my favorites are found from both places and I am so glad I found them! 🙂
Katie Lee’s, Farro, Butternut Squash, and Arugula Salad. A crowd pleaser and a must throughout the entire year!
Melt In Your Mouth Kale Salad from The Food Babe. So healthy. So simple. So filling.
We use our spiralizer all the time! They have a ton of great recipes in their cookbook but one that we always go back to is their Butternut Squash Mac and Cheese. SO GOOD!
Zoodles! I just love saying the word in itself. I was a little skeptical of these Sesame Zoodles at first but now I make them all the time. It is such a great recipe to mix and match or to have by itself.
Salmon is by far one of my favorite foods. This recipe from, The Cookie Rookie is amazing! I’m so glad we tried it because the avocado salsa is a game changer!
Anything that you can put in the crock-pot and is healthy is a win in my book. I found this recipe in September and I’ve lost track of how many times we have made it. It is delicious!
Ah homemade ketchup! Best idea! Ever since I found this recipe, I’ve stopped buying ketchup. You basically want to lick it right off the spoon! Best of all, I know all the ingredients that are included.
I’ve talked about my love for Shauna’s books here and here. The best news is that her recipes are equally as brilliant! Seriously. One of my favorite go-to’s is her Blueberry Crisp from Bread and Wine. It’s so simple, healthy, and versatile. I made a massive batch with peaches instead of blueberries and it was love at first taste. It without a doubt, belongs on my go-to favorites!

One.I love the Today Show. As in, I’m kind of obsessed with it. We didn’t have school on Monday for President’s Day, had a delay on Tuesday, and I had a math conference that was close by our house on Thursday. That being said…I got to watch the Today Show three times this week! That my friends, is a favorite of the week!
Two.
On Wednesday, I came home to find this note at the top of the steps and bottle of wine after an already extremely busy week. I love him.

Our sweet friends had a baby a few weeks ago. Yesterday, I got to see baby Micah and his amazing parents for the first time! BUT as I was oohing and ahhing over how precious he was, I forgot to take a picture! Trust me, he is adorable and it was one of my favorite parts to this week! 🙂
Five.One of my favorite snacks is energy bites. I came up with my own recipe months ago and they will be gracing the blog so soon! I made them on Monday and have been snacking on them all week long!
Today I’m linking up with Andrea for some Show and Tell Tuesday and we’re talking Pinterest! We all love Pinterest. We could spend hours on it…and I may do just that from time to time. 😉 This post was so fun trying to narrow down some of my favorite and most helpful pins! I love pinning everything from food and fitness, to fashion and decor. Pinterest is such a happy little place where every board is perfectly organized, inspirational, and has your own personal touch. Plus, it’s fun to look back at things I pinned that I would never wear again and can clean it up with one simple click of, “delete.” It’s much easier than cleaning out my own closet. 😉  Pinterest, I love you. Fashion. I love a bold watch, flannel shirt, navy blue and white striped everything, and anything that gives me a little fashion inspiration.
Food. These are without a doubt, some of my favorite go-to recipes. I go back to them time and time again!
Fitness. I started this arm workout about two years ago and still use it to this day. I love, love, love it! It’s such a quick workout and does wonders!
Teaching. The first picture is an app that helps you level the novels in your classroom. When I taught reading it was super helpful and I loved using it! I have this sign in my classroom as a daily reminder to myself of the power of teaching and learning. The last quote just makes me laugh. This used to be my favorite book and my Mom would always remind me that some days are just terrible, horrible, no good, very bad days. 😉
Home. #goals.
Babies. No, I’m not pregnant. Stop asking. I’ll make an announcement when we are, but in the meantime I’ll pray they turn out as cute as these little ones. 😉 #thingsyoucan’tcontrol
Travel. Italy and Greece are two of my very favorite places in the entire world. Hands down. I could pin pictures of both places all day long and I cannot wait to go back!
