Trail Mix Bark

For about two weeks straight I craved (and made) a, “Trail Mix” smoothie from this book. As tasty as this smoothie is, I wanted something to have on hand at school that I could have a few bites here and there to cure those pregnancy cravings. I have a feeling I’ll be making this often and switching out the ingredients to whatever we had on hand. You can do the exact same. 🙂 Happy trails! 


Ingredients: 



What to do: 

Line an 8 x 8 pan with parchment paper. Set aside. In a microwaveable dish, melt coconut oil. Once it’s melted, add cocoa powder and thoroughly mix. Pour the entire mixture onto the parchment paper. Sprinkle all desired toppings onto the mixture. Place in the freezer for 30 minutes or more if needed. Remove from freezer and break into pieces. Enjoy!

*Keep in refrigerator in an airtight container.


 

Friday Favorites

Happy, happy, happy Friday! Although I’m not a fan of the cold, I have been loving the excuse to stay inside and snuggle up. Call me crazy, but I’m trying to enjoy this season for what it’s worth. 😉

One.

I made my Crock-pot Chicken Enchilada Soup this week. It took about five minutes to chop everything up and put it all in the crock-pot. SO EASY! These are some of my favorite spices to have on hand and that used in the soup! You can click on the picture to buy them. 🙂Two.

Minted did such an amazing job on our Christmas card. Since a few lovebirds (included my cousin!) got engaged over the holidays, I thought I’d let you know that they are offering 25% off Save the Dates until January 8th!

Three.

We had a delay that turned into a snow day on Thursday, which is always fun/a favorite!

Four.My collection of essential oils has grown a little bit and I wanted something to keep them organized. I found this organizer which holds 68 bottles and has space for rollers too. I feel like a new women after organizing them all! 🙂 Plus, it’s made extremely well and an ah-mazing price!

Five.My friend mentioned how she loves this diffuser so I decided to give it a try. I was looking for another one since I want to have one in our room and one in the babies. I now have been using this one non-stop and decided to save the one we already own for the babies. This diffuser runs 8 hours, which is perfect for us and would be a little too long for the baby at first anyways. 😉 I also really love the look of it!

Crockpot Chicken Enchilada Soup

It’s been so unbelievably cold here. It’s crazy! Since it’s still dark when I leave for work and it slowly fades to a dark sky shortly after I get home, a warm and hearty crockpot meal is right up my alley!

Need more convincing? 1. You most likely have the ingredients on hand. 2. It feeds the entire family! 3. It is so dang easy! 


Ingredients:

  • 2 large tomatoes, cut and cubed
  • 1 large bell pepper, cut and cubed
  • 2 pounds boneless, skinless chicken breast
  • 2 cans of cannellini (white kidney) beans
  • 1 quart chicken stock
  • 1 tablespoon cumin
  • 4 teaspoons garlic powder
  • 2 teaspoons ancho chili powder
  • 1½ teaspoons coriander
  • ⅛ teaspoon allspice
  • 1 teaspoon salt
  • ¼ teaspoon chipotle
  • ⅛ teaspoon cinnamon

Toppings: (all optional)

  • Plain greek yogurt
  • cilantro
  • shredded mild cheddar cheese
  • avocado


What to do:

Combine all ingredients in the crcokpot and cook on high for 4-5 hours. Once it is cooked, shred the chicken (while still in the crockpot) and serve with toppings if desired! 🙂


 

Friday Favorites

This week…ahh. 🙂 It was filled to the brim with great memories and A LOT of downtime. 🙂 I collected some of my favorites for the week if you want to shop them! 🙂 I’ll be back next week with some recipes for you!

Also, I’ll be sharing the gender of our baby so soon! It was the best Christmas gift to find out if we are having a baby boy or girl! 🙂 Happy New Year everyone!

One.

This Cocokind matcha stick moisturizes my face and is great to put in my purse on the go. I originally put this on my Christmas list because I liked the simple and clean ingredients in it. Everyone also knows I love matcha. 😉 I put it on right after my face moisturizer sets on my face. It gives it that extra touch of moisture I need, especially in the winter months. I also want to try the one below. 🙂

Two.This pitcher from target is so cute!

Three.This scarf from loft is SO soft! I love a good scarf and The Loft!

Four.I think I’ve worn these earrings every day since I’ve gotten them. My Mom got them for me in the medium size and I LOVE them!

Five.

I am super excited to read this book that my sister got me! Thank goodness I still have a few days to do so. 😉

 

Friday Favorites

We have a half day of school today (which will include watching Elf) and theeeeen…I have 11 glorious days off! 🙂 My goal over the holidays is to spend some time being extra cozy with blankets, books, and PJ’s included!
