It is the end of March and time just keeps flying by month after month. In some ways I love it and in other ways, I just want to hit the pause button. 

What we’re eating this week:My Peaches and Cream Ginger Smoothie and Spicy Crustless Quiche. If it’s possible, avocados have been in our house more than ever! You can check out some of the ways we eat them, here!

What I’m reminiscing about:I’ve been thinking about my Grandpa a lot lately and how much he would have LOVED to meet our little baby.

What I’m working on:Taking things one day at a time and soaking in everything this season has to offer. 

What I’m excited about:Antique Candle Works was so sweet and asked to share my Fluffy Lemon Cheesecake recipe on their blog because it matches perfectly with their brand new scent! You can read the post here and buy the scent here!

What I’m watching/reading:Grace, Not Perfection. I just started it and can’t wait to keep reading! I’m also thinking of buying this! 🙂

Honestly, we have barely had the T.V. on and I LOVE it!

What I’m listening to:

A lot of this and a lot of that.

What I’m wearing:

I bought this dress for last weekend and plan on wearing it to at least one of our Easter services. Add some bright jewelry and it will work for Easter. Plus, it’s extremely comfortable!

What I’m doing this weekend:

Seeing family. Seeing friends. Easter. Church. A lot of everything and nothing all in one. 🙂

What I’m looking forward to next month:

Still hoping for warmer weather!

What else is new:

Eric and I have been really intentional about going on dates lately and it is just the best! (Especially when it involves Spiced Chai Lattes). 🙂

Avocado Everything

Guacamole

Spread it on toast, top a soup, or use it for a standard guacamole mix, you can’t go wrong with always having an avocado on hand. I’ve had several readers ask how I use avocados throughout the week, since I talk about them a lot and almost always have them in my kitchen. They are a staple in our house and can be added and mixed with several different dishes. To help jumpstart your brain for some ideas, I listed how I use them throughout the week in one way or another.

Brussel Sprouts Salad with Seven Layer Charlotte

Two things I’m a big fan of: Salads and Lindsay from Seven Layer Charlotte. 🙂 I love chatting with her about so many things but especially food. It was almost two years ago that we did a recipe swap together (here) so it was time for another one since I make her recipes often.

One of my absolute favorite recipes that I cannot talk enough about is her Brussel Sprouts Salad with Apples, Raisins, and Carrots. It is delicious and can just be tossed together once everything is chopped! Easy, right?! Not only are her recipes something you need to add to your menu this week, she is also the sweetest! Ingredients: 

  • 1 lb brussels sprouts shredded/chopped fine
  • 3/4 cup carrots shredded/grated (I chopped mine into small cubes)
  • 1/4 cup red onion minced
  • 1 apple diced

Friday Favorites

One. World Water Day is Thursday, March 22nd. You didnt’t know that? 😉 Although I didn’t know it had a day set aside, it is something I am passionate about. Humankind water came to our church a year or so ago. They educated the congregation on how important clean water is and the statistics really stuck with me. Nearly one billion people on our planet lack clean drinking water. Crazy!

I also found out all this information around the time Eric and I were both doing our own research on clean water. We ended up buying a RO Water Filter System for our sink and love it! Our water tastes so much and it makes me a lot more confident when I cook. Now if only we could give them to everyone. 🙂
100% of Humankind water‘s proceeds go straight to getting people clean drinking water. Plus, one bottle of water= clean water for one person for 100 days!
