Friday Favorites

I am in need of a Friday and a weekend. 🙂 I’m sure I’m not the only one either. 😉 But before we kick off the weekend, as always, I’m sharing a few of my favorites from the week!

One.

                                                          

This past weekend my cousins stopped by to shower our little girl with some books. It was so sweet! They bought such a variety of books with so much purpose in mind for each and every one of them. These are just a few of them!

Two.

Above the changing table in the nursery we had an old window frame. I wanted to hang some sort of wreath in it to soften up the room. I found this wreath and love it!

Three.

On Wednesday, I talked about baby food since I did a little research (because you can never be too prepared, right?) 😉 Well, Amazon sells both Once Upon a Farm AND Stonyfield. I linked to some of the products above for you to check out!

 

Four.

On Saturday I bought coasters similar to the ones above (except ours are circular with some lighter wood). They are simple and look great on a coffee or end table!

Homegrown Eating

I feel like the first few months of having a baby will fly and little miss will be ready for some food (other than milk) before I even blink! I plan on making majority of her baby food (using this) but I also know in reality I’ll need some more convenient and less time-consuming options at times.

With having such a strong passion for organic food, I really don’t think it is ever too early to focus on ways you want to nourish your baby beyond just milk when the time comes! I did some research to find out which brands had the same mindset I do regarding organic foods and I was so excited to find two that I plan on buying for our little babe!

Stonyfield’s YoBaby Yogurt and Once Upon a Farm were two brands that really stuck out to me because I LOVE their missions. Most of you know I’m a fan of Stonyfield’s ingredients and use them a lot when cooking or baking, but Once Upon a Farm was new to me. They are keeping it as close to home as possible by never adding sugars, preservatives or ingredients you can’t pronounce in their food. Sign me up!

Stonyfield also just came out with a new flavor (Banana/Mango Yobaby Yogurt, sounds SO good, even I want to try it!) which now contains the probiotic culture BB12. In addition to live active cultures, Stretococcus Thermophilus, Lactobacillus Bulgaricus, Lactobacillus Acidophilus, Bifidus, Lactobacillus Casei, and Lactobacillus Rhamnosus, their yogurt now contains the probiotic Bifidobacterium animalis lactis BB-12 that has been shown to have a digestive health benefit. Stonyfield has also started using PLA cups (meaning, they are made from plants!) How awesome is that?! (And hello Earth Day friends!)

Really great ingredients that are really real, make me really happy. Say that ten times fast. 😉

 

While your little one is snacking on some goodness, you can sip on some too with an Aloha Smoothie or a Peaches and Cream Ginger Smoothie (both made with Stonyfield yogurt). Burrito Bowl

It’s versatile and easy all in one. Add or subtract whatever ingredients your heart desires. Meat lovers: add your favorite on the top. Vegetarian? You are already covered!

I have made this for a Mother’s Day get-together, a Labor Day party, and for a weeknight meal. A, “Build-Your- Own-Burrito-Bowl,” is fun, festive, and great for any of the above occasions.

*I also realized after taking the pictures and then making this for dinner, that I had parsley on hand and not cilantro. HA! It worked, but cilantro is still better. 😉 


Ingredients:

*(Proportions vary based on desired amount of each ingredient).

Mexican Rice:

Cook riced cauliflower according to package. Once cooked, add black beans and corn. Stir. Add spices, 1 tablespoon of lime juice and desired amount of cilantro (shredded). Stir.



What to do:

I love to build my Burrito Bowl by covering the bottom of the bowl with the Mexican Rice combination. I then layer on lettuce, followed by guacamole and greek yogurt. Cherry tomatoes follow along with shredded cheese and more cilantro (because I LOVE it!). I have a side of plantain chips for dipping or breaking on top of the bowl.


 

Friday Favorites

Happy Easter weekend (and Friday)! A four-day weekend is ahead of me and man-oh-man am I excited!

One.I know I mentioned about how great my Lemon Cheesecake recipe and Carrot Cake Muffin recipe are for Easter but I also promised you an unbelievably easy, “recipe” of Easy Peanut Butter Fudge! Here it is just in time for Easter!  It’s also a great snack to have on hand! The trick is really letting everything set and keeping it refrigerated right before serving. You can add some chocolate on top for a different touch as well! You will definitely want to buy one of the molds below (these are just a few I found) that can help make removing them easy and for a quick clean up!


Ingredients:

  • 2 cups coconut oil
  • 2 cups creamy peanut butter


What to do:

In a microwavable bowl, combine both ingredients and heat for about 30 seconds. Carefully stir and heat longer if it is not completely mixed together. Pour into tray and refrigerate for one to two hours or until completely set. Enjoy!

Two.Between weddings, bridal showers, baby showers, and so on, Minted is always an ah-mazing choice. They’re offering 15% their entire site but it ends Monday! Snag whatever you need, fast! They have the best options!

Four.I will probably be making these at some point this weekend and you should too! 🙂 You can always forgo the bacon or chocolate if you’re not a fan of one or the other!

Sapling Child
