Friday Favorites + Hot Cocoa Stirers

We have a Valentines Party at school today, some other activities, and then I’m coming home and crashing. I just could not get it together this week. I’m glad it’s Friday. 🙂

One.Him. Not just this week, but I’m feeling extra thankful this week for what we have. You can read more about that, here.

Two.Because who doesn’t love a good pasta dish!?

Eric and I took a short getaway and it was perfect-o!

Four.They were calling for snow but who knew if it would actually happen. Well, what do you know? We woke up to this. 🙂 It made our time away even more fun and beautiful!

Five. All this snow had me craving these Hot Cocoa Stirers. 🙂


Ingredients:

  • One Dark Chocolate Bar per stirer
  • Milk
  • Whipped cream or other toppings


What to do:

You will need one chocolate bar per stirer. (I used Dove Dark Chocolate Bars). In a small sauce pan, break the chocolate bars into smaller pieces and melt on medium low to low heat. Stir occasionally to avoid burning and until fully melted. Pour or spoon the melted chocolate into a one inch tray. Place in the refrigerator for about 40 minutes or until firm. Stick a popsicle stick into the center of the cube. Return to the refrigerator for an additional 20 minutes or so.

Place stirer into a mug of heated milk and stir until melted. Top with your favorite toppings! xo


Psstt… I used this one inch Silicone cube tray and it worked great! This and this also look like they would work well!

My body has been craving clean foods but I also don’t want to walk away from the table feeling hungry. You know I’m a big fan of smoothies but I wanted a little extra somethin’ somethin’ to help energize me for the day. A smoothie bowl is the faultless balance between light and filling. Here’s a little tip: Don’t skimp on the Homemade Granola! In all honesty, it completes the smoothie bowl, providing a crunchy topping and makes it all it’s cracked up to be!

 Ingredients: 

  • 1/2 cup frozen strawberries
  • 1/3 cup fresh blueberries
  • 1/4 cup fresh raspberries
  • 1 frozen banana
  • 3/4 to 1 cup plain greek yogurt


What to do:

Combine all ingredients together in a blender and top with my Homemade Granola.

I highly recommend using frozen strawberries to keep its thick texture. If you use all fresh fruit, you will need to decrease the yogurt in half.

Game Day Fries With Yogurt Dipping Sauce

Game Day is right around the corner! And since I feel like I am STILL detoxing from Christmas, New Years, the whole nine yards, a lean and clean version of fries and a sauce is just what I need. They are the tastiest treat for Game Day, a side to any meal, or as a hearty snack. They’re the ideal balance of sweet and spicy. The crowd will go wild! 😉 


Ingredients:

Fries:

  • 4 sweet potatoes, peeled and cut to your desired size
  • EVOO to coat fries
  • 1 tsp Simply Organic Cumin
  • 1 tsp Simply Organic Paprika
  • 1/2 tsp Simply Organic Adobo Seasoning
  • 1/2 tsp Simply Organic Chili Powder
  • S&P to sprinkle

Sauce:

1 cup Stonyfield Organic Plain Double Cream Yogurt

2 Tbsp Sriracha



What to do:

Preheat oven to 400 degrees F. In a large bowl place cut sweet potatoes. Drizzle with EVOO and mix until all are lightly coated. Set aside. In a small bowl, combine all spices and mix with a spoon. Sprinkle half of the spice mixture over the sweet potatoes. Pour sweet potatoes onto a baking pan. Use the remaining spice mixture to sprinkle on top of the sweet potatoes. Place in the oven for one and a half to two hours or until crispy. Let cool. For the sauce, mix the ingredients together and dip your fries!
