Summer Quinoa Salad
It may have snowed this weekend, but I am determined to sprint right into summer mode. I’ve been cooking all things spring and summer and don’t plan on turning back until fall! This Summer Quinoa Salad is honestly so easy and can be made as a dinner for one or a large group. It’s perfect for something as simple as a quick snack or as big as a picnic! It’s light and filling with every bite and delightfully fresh!
Ingredients:
- 1 1/2 cups quinoa (cooked and completely cooled)
- 1 large cucumber (chopped)
- 1 cup crumbled feta cheese
- 1/4 cup Wish-Bone Raspberry Walnut Vinaigrette
Directions:
Once quinoa is cooked and cooled (best if kept in refrigerator and cold), combine quinoa, cucumber, and feta in a large bowl and mix. Depending on your preference, your can add more or less of any of the ingredients! Evenly drizzle dressing overtop and mix right before serving! Enjoy every bite! 🙂

Oh my!! It’s cold and rainy in the Pacific Northwest, but this salad seems delicious! I pinned it to add to my meal plan!!
