Energy Bites
There are so many recipes out there with hundreds of combinations of ingredients for energy bites. I’d be lying if I said I was determined to create my own recipe. The reality is, I was hungry one night, made a concoction and realized that what I made held together so much better than the original recipe I used. Better yet, it took a mere ten minutes to create and no time at all to harden. The best part is, these babies are so filling! I whip up about a batch of these every other week and eat them for snacks, breakfast, or really any time of day. Stir, refrigerate, and enjoy a bite-sized punch of energy with a ton of flavor!
Ingredients:
- 1 cup dark chocolate morsels
- 1/2 cup peanut butter
- 1 1/2 cups uncooked oats
- 1 banana (mashed)
- 2 tbsp. whole ground flax seed
- 1/4 cup flaked coconut
Directions:
In a small sauce pan melt the morsels and peanut butter together over medium low heat. Stir occasionally to avoid burning. In a mixing bowl, combine all dry ingredients. Once the morsels and peanut butter are completely melted, pour over the dry ingredients. Stir. Line a baking sheet with parchment paper. Roll the energy bites into one inch balls and place on the baking sheet. Refrigerate for about an hour. Enjoy!
