Ingredients:

  • 2 cups brussel sprouts (halved)
  • 1 Tbsp EVOO
  • salt and pepper to sprinkle
  • 4 pieces of bacon (cut into bite sized pieces)
  • 1 cup radishes (sliced)
  • 1 medium shallot (sliced)

Balsamic Reduction:

  • 1/4 cup balsamic vinegar
  • 1/2 tsp honey

What to do:

Preheat oven to 350 degrees. Cut the ends off of all brussel sprouts and cut in half. On a baking sheet, place the brussel sprouts and drizzle with EVOO. Sprinkle with salt and pepper. Bake for about 25 minutes or until slightly brown. Stir occasionally.

Meanwhile, cook 4 pieces of bacon in a skillet. Once they are fully cooked, set aside to cool. Keep the bacon grease in the pan. Place the radishes and shallot in the skillet with the bacon grease. Stir occasionally until slightly brown and radishes are soft.

Balsamic Reduction: In a small sauce pan, pour the balsamic vinegar and honey. Bring to a boil, then reduce heat to low for about ten minutes. Stir frequently to reduce sticking. Set aside to cool.

In a large bowl, combine brussel sprouts, radishes, shallots, and bacon. Mix together and pour into serving dish. Drizzle with balsamic reduction. Enjoy! xoxo
