If I can make a nutritious snack that feeds the craving though, I go for it. Key lime pie has been on my mind lately but I don’t want all the extra sugar. Plus, with school being right around the corner I am spending some much-needed time in the kitchen prepping for snacks and yummies that I can make quickly throughout the week. The result? Key Lime Pie Bars. Deeeee-licious! Also…five ingredients? Easy as pie!  Ingredients: 

  • 1 cup unsalted cashews
  • 1 cup almonds
  • 16 dates (cut in half or more)
  • Juice of 3 limes
  • 1/2 cup shredded coconut


What to do: 

Pour the almonds and cashews into the food processor and pulse a few times until they are semi-chopped. Add all the remaining ingredients into the food processor. Pulse a few times and then on low or until it starts forming together into a sticky mixture. Line an 8 x 8 pan (or really any pan) with wax paper. I used a spatula to flatten the mixture into an even consistency in the pan. Smooth out the top and edges. Place in the refrigerator for 2 hours. Cut to desired width. Store in an air tight container in the refrigerator or counter.


 

Friday Favorites

This week was strange. It was hot and humid one day, then overcast and felt like a fall day the next! But it’s Friday and we have a fun weekend ahead with friends and family. 🙂

One.

Alright blondes…I need your opinion! There have been a few lovely ladies I’ve talked to lately who have mentioned they use purple shampoo and conditioner. It helps hold your blonde in a lot longer without fading. I loooove the sound of this! Has anyone tried it? If so, what are some of your favorite brands? I’ve heard Joico’s shampoo and conditioner are great?!

Two.On Wednesday, I treated my sister to a Spa Day! We went to one of my favorite places and relaxed the day away! 🙂

Three.

I mentioned here that I love doing Christmas shopping in July. (Hallmark’s Christmas in July puts me in the spirit for a little!) What are some of your favorite stocking stuffers? I’m stuck and figured asking everyone on here is always so helpful!

Four.

I bought these last week and have loved putting these on top of smoothies. I’m also thinking of making some bites or bars with them! You can buy them, here!

What we’re eating this week:My salmon with a yogurt dill sauce and I’ve been adding collagen peptides to all my smoothies lately!

What I’m reminiscing about:Our trip to Capri, Tuscany, and Florence! Although it’s nice to be back, getting into the swing of things after 11 days of being away is never easy. Phew!

What I’m loving:We have been adding some fun touches to our home. I can’t wait to show you so soon!

I’m already prepping to head back to school. Otherwise, soaking up all things summer!

A little less sleep.

I just told Eric the other day how I feel behind on Christmas shopping and he laughed. Understandably so. 😉 Last year at this time I was almost done Christmas shopping and it was so fun to have it done before the season starts. I listed some of my favorites (and in a very random) assortment in a list below that you can stock up on now! Like these pajamas!

Bonus Question: What’s your favorite thing about summer?One of my very, very, very favorite parts of the summer (other than the heat and pool) is the slow mornings. I love waking up and slowly sipping my coffee in an actual mug rather than a travel mug. I love watching the sun come up and being awake before everyone else. 🙂

I have no idea where Monday went but here we are at Tuesday! We’re talking all about apps on our phone. I’m so excited to see everyone’s suggestions because I’m always far, far behind on apps!
Wunderlist is definitely one of my most helpful apps.  It’s a simple task management tool. It can be used across loads of devices meaning you can use it at your desktop or mobile when you are out. You can also share your lists, which I love! Since there are about three main places I go grocery shopping (Giant, Costco, our local meat store), I always have three lists going. I can “check” it off right on my phone. Eric and I also share a lot of lists that we can both add things to. I use it at school for my to-do lists and at home. Check it out for sure!

I use the Bible app for devotions at times. I go through spurts of doing a series for a few days, a week, or a month on here. It’s a great app. And again, you can also invite people to see plans you complete or are reading, etc. Eric and I both share our plans together. This app is another source of inspiration as part of my devotions. I like to switch things up and some days this is perfect. 🙂

This last app is just flat-out fun! Marco Polo is a video walkie-talkie. I keep in touch with a handful of college friends that live out-of-state or that I don’t get to see often.

Friday Favorites

This week has been so fun! It was such a good balance of relaxation and productivity. I love that. 🙂

I switched things up a little today and listed five books I’ve been browsing through lately. Some I have read cover to cover and other’s I’ve only browsed, but love what I see. It’s a modge podge, so get ready!  Here you go! Happy Friday ladies! Enjoy!

One.I picked this book up in February but only recently read it front to back. Let me tell you…it’s amazing. Barbara is completely inspiring and encouraging the entire way through!

Two.

I went to Barnes and Noble the other day and read some of this this book. I admire Axe’s philosophy on eating and medicine and most likely will be purchasing this book soon. I feel like it’s one of those books that will be helpful to have and reference a loooot! 🙂

Three.I read Message in a Bottle on the plane in just two days because I couldn’t put it down…and we we’re on a plane so I didn’t exactly have a lot of other options. 😉 I was definitely crying by the end and probably looked completely ridiculous doing but it was just so good. 🙂

Four.

This book was really inspirational as it goes back to the basis of being a beginner teacher. As summer comes to a closer sooner than later, it what a nice refresher and a great perspective.

Five.

This book. This girl. Her philosophy. I love it and I’ve only scratched the surface of reading it.
