What we’re eating this week:My Lemon Butter Salmon and Winter Couscous Salad!

 What I’m reminiscing about:

Eric and I started dating in the fall, so I have been thinking back to that time a lot lately. 🙂

What I’m loving:Alright, so I completely dove headfirst into podcasts. Eric listens to them on his commute and talks about them a lot. But my old car didn’t have bluetooth. (I know?) But I now spend my 45 minute commute listening my heart out to a ton of different podcasts and not wanting the drive to end. I’m obsessed.

I’ve been listening to anything from Shauna Niequist’s podcast to essential oil podcasts, to Jenna Kutcher. I’m loving them all. What other podcasts am I missing?!

What we’ve been up to:

Getting back into the school groove!

What I’m dreading:

I like fall. I really do. But I am a baby when it comes to cold weather. As in, anything less than 70 degrees makes me a little grumpy. So there’s that.

What I’m working on:

Braiding my hair more. Random, I know. 😉

What I’m excited about:Although I’m not a fan of the cold, I’m also really excited about pumpkin everything. It’s warm and cozy and who doesn’t love that?!

You can check out my pumpkin bread, pumpkin smoothie, pumpkin pecan bars, pumpkin fluff, and pumpkin spice latte!

What I’m watching/reading:The last few weeks before school started, I loved watching Ellen in the afternoon. You can always count on her for a good laugh.
This book talks about how how language is the most powerful teaching tool in the classroom. I think it also can apply to every area of life and how our language can cultivate community wherever we are. You can buy it here.

What I’m listening to:

Silence (which I’m soaking up when it comes 😉 ) and podcasts.

What I’m wearing:I’ve talked about this dress before and I’m going to talk about it again. I bought it in navy in June and wore it in Italy, around the house, out to dinner, and so on. Yesterday it was super dreary all day and I wanted something extra comfortable to wear to school. I threw this dress on, paired with this and earrings similar to these. Done!

What I’m doing this weekend:

Sleeping in. Catching my breath. Celebrating my Mom’s birthday.

AND…my best friend from Germany text me saying her and her husband will be coming home! So excited!

What I’m looking forward to next month:Our hometown fair!

What else is new:

My daily routine has changed quite a bit from summer!

Bonus Question: What are my favorite back-to-school lunch ideas/tips?!

Prep is key! As a teacher, I love a good soup since we have a microwave at school, but I also have some absolute favs that I’ll list below!

My Favorite Chicken Salad

Potato, Sausage and Leek Soup

Veggie Detox Bowl

Winter Couscous Salad

30 Minute Chili

Snacks:

Lemon Lara Bars

Healthy Pumpkin Bread

Key Lime Pie Bars

Energy Bites

Homemade Granola

Friday Favorites

Happy Friday everyone!

One.

The first week of school is in the books and let me tell you…God completely blessed this entire week! It was SO MUCH FUN! I loved getting to know the kids, the new setup of my room, and I even kind of liked being back in a routine. 🙂 That was definitely a favorite of my week!

Two.Last weekend, we had a blast celebrating one of my closest friends, Ashley getting married! Everything from the weather to the flowers and everything in between was stunning! She gave us this necklace as one of the bridesmaids gifts to wear in the wedding. So cute, right?! But one of the best parts about it was I can wear it outside of the wedding too! I love when that happens! 🙂 I’m eyeing these up too…

Also, it was SO fun to be reunited with some of my study abroad (Recap: One, two, three, and four) friends. It felt like no time had passed since I saw them and I loved every second of it! 🙂

Three. You all know I love Lily and Val. (Here and here!) She is just the sweetest! Another gift Ashley gave us were these adorable little zipped pouch from her!

Four.My new backpack is a favorite! I take it to school everyday and love it! Use code: spring15 for 15% off any order friends! xo

Five. This makes my mouth water just thinking about it! I love, love, love, LOVE my pumpkin bread recipe! (Pssttt..It’s healthy too!)

Six.

Healthy Pumpkin Bread

I know, I know…It’s still August and I’m already posting a recipe with pumpkin. BUT…like I said yesterday, if school is going to start early, I’m diving head first into pumpkin everything! 🙂 I also wanted to share this recipe for everyone to be able to pin it make it once fall actually rolls around! 😉

I debated about adding the word, “healthy” to this recipe because I really try to make most of my recipes with clean and healthy ingredients. But it felt completely necessary because this recipe contains so many beneficial and healthy ingredients that I just couldn’t resist. It’s oh so flavorful and basically creates a fall party in your mouth. See for yourself. 😉

Some of my fall favorites pictured: Pumpkin Spice Candle/The Year of Cozy Book

 Ingredients:

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/4 cup maple syrup
  • 3 Tbsp coconut oil (melted)
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1/4 cup organic coconut palm sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 Tbsp ground flax seed
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp pumpkin pie spice

What to do:

Preheat oven to 350 degrees F. In a large-sized bowl, combine all dry ingredients. Stir together and set aside. In a medium-sized bowl combine all wet ingredients and whisk. Add to dry ingredients and whisk together. Grease pan (I used butter) and pour batter into a loaf pan. Bake for 55 to 60 minutes or until you can stick a toothpick in and it comes out clean.

Best served with milk or coffee. 😉

Back-to-School

Back-to-school this year feels much different than previous ones. This is the first summer I have not worked in over 10 years. WHAAAAT?! I know. Crazy. I was able to check a lot of things off our to-do list and feel truly relaxed and energized. Of course gearing for back-to-school is never an easy task though from a teacher’s perspective in the Spring household. It takes adjusting, early bedtimes, and A LOT of prep in all areas of life each and every start to the school year.I do love the start of a new school year though where everything is nice and tidy and new beginnings are able to bloom. To get me started on the right foot, I’ve listed some of my favorite things that help me get back in the mood for school from the classroom, to meal planning, and some fashion thrown in there! You can click on the pictures and it will take you right to the link. 🙂

I’m really trying to savor this phase of life since I know teaching is only for a season. So here we go…

IN THE CLASSROOM:

I went with a popcorn theme in my classroom. I did something somewhat similar my first year of teaching but embraced it a little more this year. These are some fun things I added! Also, who doesn’t love these?! I think I’ve used them most of the summer also! 😉 And to all the teacher friends out there: Has anyone done (or are doing) the hybrid method at your school?! I’m piloting it for the first time this year and could use any and all tips!

Also, I’m old school in the sense that apples always remind me of teachers. That being said, I have this on my door when you enter my classroom. 🙂 You can click on the picture. How cute?!

AT HOME:

I try to stick to a few crockpot meals a week as I’m getting back into the swing of a different schedule. That’s a must. 🙂 (So is coffee!) I love to have all these products on hand in my pantry for quick smoothies in the morning. Maca powder helps provides hormone balance, boosts the immune system, and increases energy. It was helpful over the summer but will be completely necessary once school starts back up! You can also check out some of my other fun breakfast ideas, here! I also have a lot of my smoothies in my drinks section, here!

BACK-TO-SCHOOL SHOPPING:

Last but not least, some teaching outfits that I seem to gravitate towards. 🙂 Our dress code is pretty casual but it’s always fun to update my wardrobe this time of year!

Happy Wednesday friends!
