whatsupwed1WUWquestions editIt feels like I just wrote a post for December 2016. This year has flown by more than any other! But man, oh man has it provided a lot of changes that I have loved! God is so good. 

What we’re eating this week:We’re eating my Homemade Granola for breakfast and snacks this week. My chili is also on the menu this week. 🙂

What I’m reminiscing about:We’re planning another trip and it has the travel bug is hitting me hard!

What I’m loving:

Christmas right around the corner and a few days off work to relax! 🙂 I know I posted this last year but it applies. 😉 

What we’ve been up to:

We find out if Baby Spring a boy or girl on Tuesday! We are so, so antsy! Votes anyone? 😉

                                                                       

What I’m dreading:

Nothing. 

What I’m working on:

Wrapping Christmas gifts! I’ve had most gifts since summer but waited extra long to wrap them this year. I love this wrapping paper and tying it with this twine and gift tag!

What I’m excited about:Baby Spring is obviously on the forefront of my mind and I’m so thankful and excited!

What I’m watching/reading:

I’ve been reading the book Mama Natural and loving it!

What I’m listening to:

Obviously a modge-podge of music but Christmas has trumped it all…especially with the N*Sync throwback. 🙂 

What I’m wearing: Both of these sweaters I plan on wearing when I’m not pregnant. They are extremely comfortable! You can find the black one here and the grey one here!

What I’m doing this weekend:

CHRISTMAS EVERYTHING!

What I’m looking forward to next month:A possible snow day and the coziness of it all. As long as I can sit inside and watch it, I’m good to go! 🙂

Spinach Dip and Homemade Bread

It’s mouth watering, addicting, my go-to appetizer and a HUGE hit! Spinach Dip ingredients:

  • 1 cup mayonnaise
  • 1 (16 oz) Stonyfield Plain Organic Greek Yogurt
  • 1 (1.8 oz) package dry leek soup
  • 1 10 oz. package of frozen spinach (thawed and drained)

What to do: 

In a large bowl, stir all ingredients together until thoroughly mixed. Cover and refrigerate overnight. Easy peasy.


 


Homemade Bread ingredients: 

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/3 cup white sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 egg lightly beaten
  • 2 cups Stonyfield Plain Organic Greek Yogurt
  • 1/4 cup butter, melted

What to do: 

Preheat oven to 325 degrees F. Lightly grease a 9×5 inch loaf pan. Combine flour, baking powder, sugar, salt and baking soda in a large bowl. In a separate bowl, mix egg and yogurt together. Add the egg and yogurt mixture to the flour mixture. Gradually add butter and mix until moistened. Pour into the prepared pan. Bake for 65 to 70 minutes or until you can insert a toothpick and it comes out clean. Remove from the oven and let it cool completely. Cut into cubes for serving!

Spinach and Pear Salad

But in all honesty, the sugar intake has been a little higher than normal lately over here. That being said, a clean and healthy salad is exactly what I’ve been needing. Plus, the flavors make for an ideal side at any Holiday party. Did I mention that is take about five minutes to prepare? 🙂


Ingredients:

3 cups spinach

About 1 pear (cut into cubes)

2/3 cup crumbled feta

2/3 cup sliced almonds

Dressing:

1 tsp EVOO

1 tsp Balsamic Vinegar

S & P to taste



What to do:

Place spinach in a medium sized bowl. Top with pear, feta, and slivered almonds. In a mason jar, create dressing and shake well. Pour dressing over salad and serve immediately. Enjoy! 🙂
