I don’t think I have ever paused, looked up and whispered to God, “thank you” as much as I have in this season of life. I’m beyond grateful for these two people standing (and being carried) beside me and I truly wish you and your family the best holiday season! xo

Friday Snow Day Essential Favorites

It’s not even Thanksgiving yet and it snowed here in PA. Any excuse to get extra cozy though sounded great to me..and that’s exactly what we did. 🙂 So for today, I’m sharing one of my favorite snow day recipes: Apple Crisp! Yesterday on Instagram I posted the recipe. You can go here to find the instructions for the recipe but since several of you asked for it to be on my blog, here it is as well! 🙂

Apple Crisp

Ingredients

  • 2 large apples (thinly sliced)
  • Topping ingredients:
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup EVOO
  • 1/4 cup maple syrup
  • 1/2 tsp salt
  • Butter for greasing

Instructions

  1. Preheat oven at 350 degrees. Grease a loaf pan or an 8x8 pan with butter. Thinly slice both apples and put in pan. In a medium-sized bowl mix topping ingredients. Evenly spread the topping on top of the apples and sprinkle with coconut sugar and/or cinnamon. Bake for 35 to 40 minutes or until apples are tender. Serve with yogurt, heavy cream poured on top or ice cream! If you want to add some more sweetness, sprinkle additional coconut sugar onto the top. Enjoy!

Friday Favorites

This week was so special. There were endless snuggles, a lot of Christmas music, and quality time all around. It was a good week for sure.

As I was thinking about some of my favorites, I realized there are some things that I take pride in getting the most bang for my buck. If there is a product I use consistently and want to have on hand, I stock up with no shame. Three bottles of moisturizer that I use every day for a sale price? Yes please. 🙂 Here we go with the (very random) list and happy Friday everyone!

One.Naty Diapers

Diapers. It’s the phase of life I’m in, as are many of you. I’m using multiple diapers a day and need to have extra on hand. These are the diapers I buy and LOVE! We’ve tried a few brands and I always go back to these. I feel like at least once a month, Target has a deal that when you spend a certain amount on diapers you receive a gift card. Why not?! Buy five packs of diapers and use the gift card towards more diapers. I’m going to be using them anyways, so it’s a no brainer. For the most part, I only stock up on diapers when they have this deal and it’s worked out great! (Plus I use my redcard and get 5% back and free shipping).

Two.

If you’ve followed along for awhile you know I use this face moisturizer. I put it on every morning after I shower and sometimes at night when I take my make-up off. I go back and forth between buying it on Amazon (it’s still sold through First Aid Beauty and free shipping) or from their actual website. Friday Favorites with Amazon

I’ve rounded up a few Amazon favorites lately for a short and sweet post for your Friday! These were the last five things I ordered on Amazon and honestly, I happened to love every single thing.

One.

We got to the point where Capri needed something where she would be able to, “stand” and not always be on the floor. I found this Baby Activity Center, ordered it, and I can’t say enough good things about it! It grows with the baby because the middle seat comes out and gets replaced with a circle making it a table. The toys are removable and it will be perfect over the next few years! Christmas anyone?

Two.

The other week I bought these little mittens. How stinkin’ cute?!

Three.

Remember my post on natural energy and beauty products? I mentioned about probiotics and still love the brand I posted but also like this probiotic.

Four.

How many of you do Operation Christmas Child? If you don’t know what it is or want to get involved, you can read all about it here. I know it’s hard to find gifts that can fit into a shoebox so I thought I’d help you out. I already ordered the sports balls with pump (they recommend it coming with a pump) and it fits great in a shoebox, leaving room for some other things they mentioned packing as well. 🙂 You could also get this for a Christmas gift in general!

Friday Favorites

Happy Friday! This week’s list is a random mix of my favorites with a busy weekend ahead! I’m so thankful it’s Friday! 😉

One.

My Mom found this magnetic onesie a few months ago for Capri. It was for when she was a little older and I finally was able to put it on her last week. Oh. My. Goodness! I love it! Instead of buttons or a zipper, it has a magnetic connector, which makes it SO easy to dress her. I have loved so many onesies but this one is just flat-out easy and fun!

Two.

The cold weather in PA came out of nowhere! It went from 80 degrees to 40 basically overnight! So when I saw these beanies for a Mom and daughter, I had to order them. 🙂 I got the tan color.

Three.
For my birthday last week, I got a text from my cousin telling me to expect something in the mail on Saturday. Saturday rolled around and I checked the mail to find the book The Remember Balloons and a note.

Let’s rewind for a second. My mom’s mom and I were extremely close growing up. When I was in middle school, her health declined and she suffered from alzheimer’s. A few years later she passed away. We actually chose Capri’s middle name because that was my Grandma’s middle name as well. She was a special lady and someone I still hold very close to my heart.

All of that being said, the note said, “This book is for you now but it is also for Capri when you are ready to tell her about Grandma.” The book is heartwarming and you are guarenteed to cry. It was such a thoughtful gift on so many levels.

Four.

Chicken and Kale in Parmesan Sauce

Ingredients

  • 1 bunch kale, stemmed and chopped
  • 1/2 cup water
  • 2 Tbsp white vinegar
  • pinch of salt
  • 1/2 tsp pepper
  • 3/4 cup heavy whipping cream
  • 2 Tbsp butter
  • 3 oz grated parmesan cheese
  • 1/2 lb boneless chicken breast, diced

Instructions

  1. Combine kale, water, vinegar, and salt in a saucepan. Cook over medium heat until kale is wilted, remove from heat and drain, reserving the liquid, set kale aside.
  2. Combine the reserved liquid and diced chicken in saucepan. Cook until chicken is no longer pink. Stir in kale, heavy cream, butter, and pepper. Cook 8-10 minutes until mixture is hot, stirring occasionally. Sprinkle parmesan cheese over the mixture. Stir until melted and sauce thickens.

From cold weather to sweet books, cozy food is always needed this time of year. I made this Chicken and Kale in Parmesan Sauce recipe last week and Eric LOVED it! I don’t have pictures to go with it but I thought I’d share. It’s super easy!

And with cold weather comes trying to maintain hair. You know how Sephora always gives you a million samples? To be honest, I don’t use half of them. But the other week I happened to use one of their creams because my hair just needed help. I loved the smell and what it did for my hair that I ordered it…and you should too.
