Each year, as Easter was approaching, my Mom would ask if my sister and I wanted to help with the food at church after the sunrise service. My sister declined and preferred more sleep, and I excitedly said yes, wanting to be in on all the action. My Mom was in charge of setting up all of the food for a crowd full of people who came after a lovely sunrise service, recognizing the real reason for celebrating Easter in all of it’s goodness. They came with full hearts and empty stomaches, ready to eat some yummy breakfast foods while sipping hot coffee to take off the chill from the outdoors.
My Mom and I would drive to a local bakery, picking up dozens of muffins and donuts galore. When we got to church, we poured endless cups of chocolate milk, prepped the coffee, cut each muffins perfectly, and delicately arranged each donut in beautiful fashion. The breakfast after the sunrise service is a memory I think back on every Easter. After focusing on the real reason of Easter, I quickly think of going to a local bakery and picking up food for dozens of people.
Don’t get me wrong, I’m the first to indulge in something to cure my sweet tooth, but as this season rolls around, I wanted a tasty alternative to the norm. A memory that left my heart and stomach feeling happy. 🙂 These healthy muffins are filling and chocolatey, leaving nothing to be desired. They are without-a-doubt the best when paired with coffee and slowly eaten with the ones you love during the Easter season.
3 cups super-fine almond flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 Tbsp whole ground flax seed meal
1/4 cup unsweetened dark chocolate cocoa powder
2 ripe bananas, mashed
3 eggs, beaten
1/4 cup almond butter
4 Tbsp pure maple syrup
1/2 cup dark chocolate chip morsels
What to do:
Preheat oven to 350 degrees. Combine all dry ingredients (except the chocolate morsels) together in a medium-sized bowl. Set aside. Combine bananas, eggs, almond butter, and maple syrup together. Whisk. Fold in dry ingredients with wet ingredients and slowly add morsels. Whisk until thoroughly mixed. Place muffin liners in a muffin tin and fill each liner about three quarters full. Bake for about 30 mins or until you stick a toothpick in and it comes out clean. Pour some coffee and enjoy!

I’m constantly drawing strength from something higher than myself in every situation because Lord knows we could all use a little extra dose of strength and patience along the way in life.

Preheat oven to 350 degrees. Pour blueberries into a loaf pan and set aside. In a medium-sized bowl combine flour, oats, maple syrup, EVOO, and salt. Stir until completely mixed. Pour and spread on top of the blueberries in pan. Bake for about 45 minutes or until the top is brown and/or fruit is bubbling. Remove from oven and top with granola and a large scoop of Stonyfield’s Organic 100% Grassfed Blueberry Greek Yogurt.
Tomorrow is lovey day. I think there should always be a reason to celebrate loved ones all around you. Also, if there’s an excuse to make some fun food, count me in! A triffle is simple, yet elegant. What to do:
Homemade Whipped Cream:
In a mixer, whip heavy whipping cream and sprinkle in sugar to taste. Whip on the highest setting for a few minutes.
You can use any type of glass or mug for the triffle. I used champagne flutes to add a fun touch. Cut the brownies into one inch squares and place about three squares into the bottom of each champagne flute. Add about one to two dollaps of homemade whipped cream to the champagne flute. Add three to four raspberries. Add about three brownie squares again. Add one to two dollaps of whipped topping. Top with one raspberry on top for garnish.
*All the ingredients are approximate, depending on your liking.*

Four.They were calling for snow but who knew if it would actually happen. Well, what do you know? We woke up to this. 🙂 It made our time away even more fun and beautiful!
Five. All this snow had me craving these Hot Cocoa Stirers. 🙂
One Dark Chocolate Bar per stirer
Whipped cream or other toppings
What to do:
You will need one chocolate bar per stirer. (I used Dove Dark Chocolate Bars). In a small sauce pan, break the chocolate bars into smaller pieces and melt on medium low to low heat. Stir occasionally to avoid burning and until fully melted. Pour or spoon the melted chocolate into a one inch tray. Place in the refrigerator for about 40 minutes or until firm. Stick a popsicle stick into the center of the cube. Return to the refrigerator for an additional 20 minutes or so.
Place stirer into a mug of heated milk and stir until melted. Top with your favorite toppings! xo

The holidays are surrounded by food and the memories being made while creating it. If you have not done so yet, add cookie baking to your list before the 25th rolls around! Put on some Christmas tunes, sip some hot coffee, and whip up this batch of cookies. The chocolate infused with peppermint is the perfect balance of lightening up the richness of the double chocolate. Not that double chocolate anything is ever a bad thing. 😉
3/4 cup Stonyfield plain greek yogurt
1/2 cup butter (melted)
1 cup granulated sugar
10 drops peppermint essential oil (or more)
2 cups all purpose flour
1 and 1/3 cups 100% cocoa powder
2 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1 and 1/3 cup dark chocolate chips
What to do:
Preheat oven to 350 degrees. Combine all wet ingredients and mix. Fold in the dry ingredients and then lightly mix. I used my Levoons measuring spoons for all my dry ingredients to make measuring so much easier. It scraps off all the excess while measuring and I loved it! Form the dough into one inch balls and lightly flatten. I like to use this scoop. It works like a charm! After my batter was prepped and the oven was heated, I scooped my goodies onto my Silapt mat. This was the first time I used it and absolutely loved it! The mat can be put right on a baking sheet and put in the oven. I didn’t have the grease the baking sheet at all and the clean up was ten times easier! Bake for about 12 minutes. Pull out of oven and let cool for about 10 minutes.
