Larabars: 10 for $10?! How could I not pick them up? (Sometimes I’m even tempted to get twenty. Shh!) They’re the perfect guilt-free grab and go snack to have on hand and so tasty!

A few weeks ago one of my friends mentioned how she made homemade larabars. In that moment, it was as if the stars aligned! Why had I not thought about this before?! Fast forward to last Thursday’s To-Do list that had one thing written on it. One thing. There were no excuses or putting off testing and trying out my very favorite flavor of larabars in our very own kitchen. I expected the trial and error of making these at home to take a few attempts but to my giddy surprise, it didn’t! I guess when something has so few ingredients, you can’t really mess it up! They’re simply delicious, healthy, and easy.

Ingredients:

  • 3/4 cup unsalted cashews
  • 1/2 cup unsalted almonds
  • 1.5 cups packed pitted dates (I cut the dates in half so they could be packed better)
  • 3 Tbsp fresh lemon juice (about the juice from one lemon)
  • 1/4 tsp salt


What to do: 

Pour the almonds and cashews into the food processor and pulse a few times until they are semi-chopped. Add all the remaining ingredients into the food processor. Pulse a few times and then on low or until it starts forming together into a sticky mixture. Line an 8 x 8 pan (or really any pan) with wax paper. I used a spatula to flatten the mixture into an even consistency in the pan. Smooth out the top and edges. Place in the refrigerator for 2 hours. Cut to desired width. Store in an air tight container in the refrigerator or counter.

The presentation, atmosphere and quality of food play a significant role from the first bite to the last. However, you don’t need to be at a fancy restaurant with a master chef to set the stage for precious memories to be made. Your kitchen is the perfect backdrop, and your family is the best crew to help! Also, never underestimate the power of simple ingredients! As far as I’m concerned, creativity always gets bonus points in my book!

That being said, you know how I couldn’t stop talking about these?! Those bars that we’re just so delectable for an on-the-go snack or for your afternoon quiet time were made over! I’ve created a copycat of a copycat and I’m so glad I did! The hardest part: I’m not sure which I love more, the bites or the bars?! The same, clean and nourishing ingredients, are transformed into edible bites that show you a different experience but will still have you reaching for more. What we’re eating this week:My Lemon Butter Salmon and Winter Couscous Salad!

 What I’m reminiscing about:

Eric and I started dating in the fall, so I have been thinking back to that time a lot lately. 🙂 

What I’m loving:Alright, so I completely dove headfirst into podcasts. Eric listens to them on his commute and talks about them a lot. But my old car didn’t have bluetooth. (I know?) But I now spend my 45 minute commute listening my heart out to a ton of different podcasts and not wanting the drive to end. I’m obsessed.

I’ve been listening to anything from Shauna Niequist’s podcast to essential oil podcasts, to Jenna Kutcher. I’m loving them all. What other podcasts am I missing?!

What we’ve been up to:

Getting back into the school groove!

What I’m dreading:

I like fall. I really do. But I am a baby when it comes to cold weather. As in, anything less than 70 degrees makes me a little grumpy. So there’s that. 

What I’m working on:

Braiding my hair more. Random, I know. 😉 

What I’m excited about:Although I’m not a fan of the cold, I’m also really excited about pumpkin everything. It’s warm and cozy and who doesn’t love that?!

What I’m watching/reading:The last few weeks before school started, I loved watching Ellen in the afternoon. You can always count on her for a good laugh.
This book talks about how how language is the most powerful teaching tool in the classroom. I think it also can apply to every area of life and how our language can cultivate community wherever we are. You can buy it here.

What I’m listening to:

Silence (which I’m soaking up when it comes 😉 ) and podcasts.

What I’m wearing:I’ve talked about this dress before and I’m going to talk about it again. I bought it in navy in June and wore it in Italy, around the house, out to dinner, and so on. Yesterday it was super dreary all day and I wanted something extra comfortable to wear to school. I threw this dress on, paired with this and earrings similar to these. Done!

What I’m doing this weekend:

Sleeping in. Catching my breath. Celebrating my Mom’s birthday.

AND…my best friend from Germany text me saying her and her husband will be coming home! So excited! 

What I’m looking forward to next month:Our hometown fair!

What else is new:

My daily routine has changed quite a bit from summer!

So the last few weeks, Eric and I have spent one night a week at Barnes and Noble. Hot date, right? 😉 I honestly have looked forward to it each week. It’s such a nice time to unwind, browse, and just relax. These are some of the books I flipped through. 

What we’ve been up to:Booking and planning trips! In the last two weeks we have planned three getaways and I can’t wait!

What I’m excited about:We went to see the movie Passengers on Saturday and although JLaw isn’t my favorite actress, she completely inspired me to cut my hair. I text me hair dresser and it’s happening on Saturday! Eeeek!

What I’m watching/reading:My Mom has never seen this movie so I willingly volunteered to watch it again! 😉 I love this movie!
I feel like the world’s slowest reader when I do these posts because I realize much I’ve been lacking in the reading department. If you read this post though, you know it’s a part of some of my “me time”, which will be happening more often. 🙂

My Favorite Chicken Salad Recipe: You could put this on a croissant, wrap, bread, or lettuce wrap to switch things up!

School lunches can be a part of what your family is eating the night before or has on hand throughout the week. I also know that it needs to be something that doesn’t needed to be heated or kept extremely cold, which eliminates a lot of things. Here’s a list of recipes I have on hand that are perfect for school lunches and encompass those two categories! (Also, I’ve used this lunch bag for years and loved it!)Burrito Bowl: Can be eaten cold. 🙂Brussel Sprouts Salad: I bet if your kids try it, they will love it! Plus, it’s a great way to get them to eat veggies.Cheese Board : Mix and match dried fruits, fresh fruits, cheeses, nuts, and crackers and/or bread. Mixing and matching the combination will make it feel like an entirely different lunch!Winter Couscous Salad: Make a big batch of this for the week to have on hand. It’s addicting, so flavorful, and can be eaten cold!
