With the recent 90 degree weather, I have been craving all things refreshing. Tomato Puff’s have become a recent obsession that I just can’t seem to get enough of. They’re simple, flavorful, and healthy. It’s a win all around! This is a great for breakfast, lunch, or a quick snack at any time of the day! 🙂
Andrea, Erika, and I are talking all about summer plans which is convenient since summer break starts in 3 days! THREE DAYS PEOPLE! 🙂 Summer is my favorite season and I am so excited for this particular summer! This summer includes vacations and a lot of time spent with the ones we love. We are headed to Colorado in just a few short days to see everything it has to offer and visit my family all in one. We plan on hiking, biking, going to wineries, kayaking, and taking it all in. We celebrate our one year anniversary and will most likely reminisce about our wedding day at least ten times.
I’ll be tutoring and babysitting one day a week which leaves a lot of free time that I am SO thankful for. I plan on spending time outside, by the pool, a beach trip here or there, and a lot of cooking and baking. What types of recipes do you want to see?! I plan on catching up on the never-ending list of things I’ve put off during the school year and catching up on a lot of sleep in the mix of it all! 🙂 I’m wholeheartedly ready for you, summer!

Four.Yesterday I talked about this restaurant that easily became a favorite of last weekend!
Last weekend, Eric and I went to Cape May. They were calling for rain all weekend but we decided to make the best of it and catch up on some snuggles and reading. As always, one of the things we were most excited about was our reservation at The Ebbitt Room. They are a farm-to-table restaurant with a menu that made my mouth water just reading it.
We dressed up and walked into a dimly lit room with live piano music, the bartender doing his job flawlessly, and an extremely attentive staff. Honestly, they were SO professional, friendly and knew what they were doing. We started with a charcuterie board, wine, and bourbon on the rocks. I proceeded to order Pan Roasted Organic Salmon with Spring Vegetable Fricasse, Sauce Bearnaise and Eric ordered Roasted Duck with Couscous and Spring Vegetables. The food was more than just food, it was an experience.Every bite was worth every penny, and more. It bursted with freshness and flavor, while the portions left you feeling completely satisfied.

What I’m watching/reading:It’s baaaaack! A group of girls and I usually get together to watch the Bachelor/Bachelorette and last night was no exception. We ate, talked, and filled out our brackets for who we think will make it from week to week. 😉 This book!Â
Going to the pool as much as possible. Prepping for the last week of school. Getting ready to celebrate one of my sweet friend’s getting married next weekend and spending time with this guy as much as possible! The next few weeks are jam-packed with goodness!Â
What I’m looking forward to next month:SUMMER BREAK!
What else is new:
Eric plays on our church softball team and I try to make it to at least one game a week. It definitely changes our schedule and it is completely new to me. Other than that, same old, same old!
