As I was Christmas shopping, I stumbled upon these spoons and realized they would be the perfect pair to any hot drink, for any time of year. Give me the people I love, a warm blanket, and a mug filled to the brim with hot chocolate, lots of whipped cream and crushed peppermint and I’ve officially reached my happy place. Go pour yourself and your loved ones some hot chocolate and use a cute spoon to stir it up!

Hot Chocolate Ingredients:

  • 1 8 qt. box powdered milk
  • 1 16 oz. box Nestle Quick (no sugar added)
  • 1 6 oz. (2 cups) non-dairy creamer
  • 1 cup Ovaltine malt mix
  • Whipped cream, mini marshmallows, and/or crushed peppermint for topping (optional)

What to do:

Mix all ingredients together in a large bowl. Stir well. Store in a sealed container.

For making one cup of hot chocolate: Heat milk. Add four spoonfuls of hot chocolate mix or desired amount. Top with whipped cream, mini marshmallows, and/or crushed peppermint. Snuggle and sip on this goodness!

Easy Tomato Soup

What made it even more beautiful was that we had nothing planned and could sit and watch it fall all around us. Naturally, when it is frigid outside, I crave hot foods. Food that soothes the soul. Food that pairs easily with a variety of things that we have on hand. Best of all, food that I don’t feel the least bit guilty about when I help myself to seconds. This is SUCH a healthy tomato soup recipe. I am in love with it. Top it with sun-dried tomatoes, basil, croutons, or pair it with grilled cheese and you are set. Operation snow day: Complete! 🙂

Easy Tomato Soup stephanie-spring.com


Ingredients:

  • 2 tablespoons virgin coconut oil
  • 3 teaspoons of minced garlic (about 5 cloves)
  • 4 large organic tomatoes
  • 1/2 cup of fresh basil
  • 1 cup organic chicken stock
  • 2/3 cup coconut milk
  • 1 teaspoon sea salt

What to do:

In a large pot heat the coconut oil over medium low heat and add minced garlic. Cook for one minute. Wash and cut the tomatoes into large chunks and add to pot. Add basil. Cover and cook over low heat for 30 minutes. Remove from heat and let it cool slightly. Once it is cooled, use an immersion blender to blend all ingredients until it is smooth. Return to stove on medium low heat and add the broth, coconut milk, and salt. Stir and cover for about 3 minutes. Remove from stove. Top it with any topping of your choice! Enjoy! 🙂


 

Let’s Talk…New Years

339912423_4416699c99_oHow is it already the end of January?! I normally don’t make goals or New Year’s resolutions for the entire year. However, I love making goals for each month. My goals can be something as generic as, “Get more sleep,” to something as specific as, “Pray for Matt, Jamie, and the baby on the way.” A new year is fun, but a fresh set of goals each month keeps me focused and motivated.

Although I don’t make goals for the entire year, there are a lot of things happening in 2016 that I am so excited about!

stephanie-spring.com1. One of my sweetest friends is getting married this summer. I am so excited for her and her fiancé and cannot wait to be a part of it!

2231903771_5f260e460a_o2. Eric and I are booking a trip to Italy and Germany. We have talked about this for a long time and are so excited to start planning the trip! Any and all tips are welcome!

imgres3. This year I went from teaching all subjects to just math and I have absolutely LOVE it! In June, I will end my second full year of teaching and start my third year. It is crazy how much the time has flown by!

BelongTour16_Spotlight_610x3204. In September, one of my closest friends (who shares my love of Shauna Niequist) and I are going to the Belong Tour. I’m sure it will be a weekend to remember.
